
Ingredients
For Chicken Marination
4 no. whole Chicken thighs, चिकन
½ tsp Turmeric powder, हल्दी पाउडर
Salt to taste, नमक स्वादअनुसार
1 small Onion, chopped, प्याज
½ tsp Black peppercorn, crushed, कुटी हुई काली मिर्च
½ inch Ginger (peeled & finely chopped) अदरक
2-3 Garlic cloves, chopped, लहसुन
1 tsp Toddy vinegar, ताड़ी सिरका
3-4 tbsp Prepared Paste, तैयार किया हुआ पेस्ट
1-2 tbsp Olive oil, जतुन तेल
For Paste
⅓ cup Coriander leaves, धनिया पत्ता
¼ cup fresh Mint leaves, पुदीना पत्ता
5-6 Garlic cloves, लहसुन
½ inch Ginger, peeled, अदरक
Salt to taste, नमक स्वादअनुसार
2 tsp Toddy vinegar, ताड़ी सिरका
¼ tsp Sugar, चीनी
1 medium Onion, roughly sliced, प्याज
½ tsp Cumin seeds, जीरा
9-10 no. Black peppercorns, काली मिर्च के दाने
1 tsp Coriander seeds, धनिया के बीज
2-3 no. Green cardamom, हरी इलायची
2-3 no. Clove, लौंग
½ inch Cinnamon stick, दालचीनी
1 Green chili, broken into half, हरी मिर्च
Other Ingredients
2-3 tsp Oil for frying, तेल तलने के लिए
½ Onion, sliced, प्याज
½ Tomato, roughly dice, टमाटर
½ Capsicum, slice, शिमला मिर्च
For Garnish
Lemon wedge, नींबू की फांक
Coriander sprig, धनिया पत्ता
Process
For Chicken Marination
- In a large bowl, add chicken thigh, turmeric powder, salt to taste, onion, crushed black peppercorns, ginger, garlic, toddy vinegar and marinate well. Keep it aside for 5-10 minutes.
- Add prepared paste and mix it well. Rest it for 10-15 minutes.
- Add olive oil and keep it aside for further use.
For Paste
- In a bowl, add coriander leaves, mint leaves, garlic, ginger, toddy vinegar, salt to taste, sugar, onion, cumin seeds, black peppercorns, coriander seeds, green cardamom, clove, cinnamon stick and green chili.
- Transfer it to a grinder jar and make smooth paste.
- Keep it aside for further use.
For Chicken Cafreal
- In a pan add oil, once it’s hot, add marinated chicken, close the lid and cook it from both the sides until tender.
- In the same pan, add onion, tomato, capsicum, left over marinade and stir fry it.
- Transfer it to a serving dish, make a veggie bed and place chicken cafreal on the top.
- Garnish it with lemon wedges and coriander sprig.
Serve hot with goan poi.
