Ingredients

1 inch Ginger, chopped, अदरक

3 fresh Green chilli, chopped, हरी मिर्च

2 tbsp Coriander leaves, chopped, धनिया के पत्ते

2 medium Onion, chopped, प्याज

Roasted Corn kernel, भुने हुए भुट्टे के दाने

Roasted Green Chillies, chopped, भुनी हुई हरी मिर्च

Roasted Tomato, chopped, भुना हुआ टमाटर

1 tbsp Mustard Oil, सरसों का तेल

½ tbsp Prepared Tandoori Masala, तैयार किया हुआ तंदूरी मसाला

Salt to taste, नमक स्वादानुसार

½ medium Lemon juice, नींबू का रस

Few fresh Mint leaves , पुदीने के पत्ते

 

For Roasting

2 whole Corn , भुट्टा

2 fresh Green Chillies , हरी मिर्च

1 medium Tomato , टमाटर

 

For Tandoori Masala

4 tbsp Black peppercorns, काली मिर्च के दाने

2 tbsp Coriander seeds, धनिया के बीज

3 tbsp Cumin seeds, जीरा

1 tbsp Fennel seeds, सौंफ

1 Black cardamom, काली इलाइची

3 Cloves , लॉन्ग

1-2 Green Cardamom , हरी इलायची

1½ tbsp Degi Red chilli powder , देगी लाल मिर्च पाउडर

1 tbsp Dried Mango powder , अमचूर

 

For Garnish

1 tbsp Hung curd , टंगा हुआ दही

Mint Sprig , पुदीना

Pinch Tandoori Masala तंदूरी मसाला

 

Process

For Tandoori Masala

  • In a pan add black peppercorns, coriander seeds, cumin seeds, fennel seeds, black cardamom, cloves, green cardamom and dry roast until fragrant.
  • Remove and let it cool down and grind it into a fine powder.
  • Now add degi red chilli powder, dried mango powder and mix everything properly. Set aside.

 

For Roasting

  • Roast corn, green chillies, tomato on hot coal or on open flames or in the oven until charred properly.
  • Remove and set aside to cool down.

 

For Tandoori Bhutta Chaat

  • In a bowl add chopped ginger, green chillies, coriander leaves, onion, roasted corn kernels, roasted green chillies, roasted tomato, mustard oil, tandoori masala, salt , lemon juice, mint leaves and mix everything together.
  • Serve in a bowl and garnish with hung curd, mint sprig and pinch of tandoori masala.
