
Ingredients
For Chicken Stock
1 ½ tbsp Butter, मक्खन
1 medium size Onion, sliced, प्याज
½ inch Ginger, sliced, अदरक
2-3 Bay leaf, तेजपत्ता
2-3 Cloves, लॉन्ग
8-10 Black peppercorns, काली मिर्च के दाने
600 gms Chicken with bones, चिकन की हड्डियों
few Tender Coriander stem, धनिया के डंठल
½ small Carrot, sliced, गाजर
1 ltr Water, पानी
2 tsp Lemon juice or vinegar (optional) नींबू का रस
For Chinese Style Soup
1 ½ tsp Oil, तेल
½ inch Ginger, finely chopped, अदरक
1 small Carrot, finely chopped, गाजर
5-6 French beans, chopped, फ्रेंच बींस
¼ cup Sweet corn kernels, भुट्टे के दाने
2-3 cups Prepared Chicken Stock, तैयार किया हुआ चिकन स्टॉक
Salt to taste, नमक स्वादअनुसार
⅓ cup Shredded Chicken, चिकन
½ inch Ginger, peeled, finely chopped, अदरक
1 ½ tbsp Cornstarch slurry / Arrowroot Slurry (कॉर्न स्टार्च या आरारूट का लिजाम)
For Egg Drop Soup
1 Egg अंडा
1 tsp Water पानी
For Garnish
Spring onion, chopped, प्याज़ पत्ता
For Indian Style Soup
1 ½ tsp Oil, तेल
1 Green cardamom, हरी इलायची
¼ tsp Cumin seeds, जीरा
1 medium size Onion, finely sliced, प्याज
1 Green chili (chopped, less spicy) हरी मिर्च
½ tbsp Butter, cube, मक्खन
A pinch of asafoetida, हींग
¼ tsp Turmeric powder, हल्दी पाउडर
A pinch of degi red chili powder, देगी लाल मिर्च पाउडर
2-3 cups Prepared Chicken Stock, तैयार किया हुआ चिकन स्टॉक
Salt to taste, नमक स्वादअनुसार
⅓ cup Shredded Chicken, चिकन
½ tbsp Tender Coriander stem, chopped, धनिया के डंठल
1 tbsp Coriander leaves, chopped, धनिया पत्ता
Process
For Chicken Stock
- In a sauce pot, add butter once it’s melted, add onion, ginger and saute well.
- Add bay leaf, cloves, black peppercorns, chicken with bones and saute.
- Add tender coriander stem, carrot and stir well.
- Now, add water and cover it with the lid and give it a boil. Remove the lid and skim the stock in intervals.
- Add lemon juice and stir well. Strain the stock and transfer it into another bowl.
- Keep the chicken bones and Shredded chicken aside for further use.
For Egg Drop
- In a bowl, add egg, little water and mix well.
- Keep aside for further use.
For Chinese Style Soup
- In a wok or sauce pot, add oil once hot, add ginger and saute.
- Add carrot, french beans and saute it for 2-4 minutes. Add sweet corn and toss well.
- Now, add prepared chicken stock, salt to taste and shredded chicken.
- Once it’s simmering, add ginger, cornstarch slurry and mix well.
- Start pouring the egg drop mixture from a height into the soup and keep stirring continuously.
- Cook until it is thick. transfer it into a serving bowl.
- Garnish it with spring onion and serve hot.
For Indian Style Soup
- In a sauce pot, add oil once hot, add green cardamom, cumin seeds and let it splutter.
- Add onion, green chili, butter and saute well.
- Add asafoetida, turmeric powder, degi red chili powder and saute for 2 minutes.
- Now, add prepared chicken stock, salt to taste, shredded chicken, tender coriander stem and let it simmer for 5-10 minutes.
- Finish it with coriander leaves and serve hot.
