
Veg Kolhapuri होटल जैसा तीखा वेज कोल्हापुरी Restaurant style Spicy Mixed Veg
One Masala and you can whip up any kolhapuri style dish that you are in the mood to cook :)
Ingredients
For Dry Masala
2 heaped tbsp Coriander seeds, धनिये के बीज
2 tsp Cumin seeds, जीरा
1 tbsp Poppy seeds, खसखस
3-4 no. Green cardamom, हरी इलायची
4-5 no. Cloves, लौंग
1 no. Star anise, चक्र फूल
1 ½ inch Cinnamon stick, दालचीनी
3-4 Bay leaf, तेजपत्ता
½ tbsp Stone flower, दगड़ फूल
Salt to taste, नमक स्वादअनुसार
3-4 no. dry Kashmiri red chillies, सूखी कश्मीरी लाल मिर्च
¼ cup dry Coconut, sliced, सूखा नारियल
1 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
For Vatan
1-2 tbsp Oil, तेल
10-12 no. Garlic cloves, लहसुन
¼ cup dry Coconut, sliced, सूखा नारियल
3 medium Roasted Onions (peeled & roughly chopped) भुना हुआ प्याज
2-3 tbsp Prepared Dry Masala, तैयार किया हुआ मसाला
For Boiling Vegetables
1 cup Water, पानी
1 medium Carrot, diced, गाजर
1 medium Cauliflower, cut into florets, फूलगोभी
Salt to taste, नमक स्वादअनुसार
⅓ cup Green peas, हरे मटर
10-12 no. French beans, roughly chopped, फ्रेंच बीन्स
For Veg Kolhapuri
2 tbsp Oil, तेल
2 no. Green cardamom, हरी इलायची
1 no. Mace, जावित्री
Prepared Paste, तैयार किया हुआ पेस्ट
Water as required, पानी
Boiled Vegetables, उबली हुई सब्जियां
200 gms Paneer, diced, पनीर
1 tbsp Tender Coriander stems, finely chopped, धनिया के डंठल
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Dry Masala
- In a pan, add coriander seeds, cumin seeds, poppy seeds, green cardamom, cloves, star anise, cinnamon stick, bay leaf, stone flower, salt to taste and roast them for 2-3 minutes or until it’s fragrant.
- Add dry kashmiri red chillies, dry coconut, degi red chili powder and mix it well.
- Transfer it to a mixer grinder jar and grind it smoothly.
- Keep it aside for further use.
For Vatan
- In a shallow pan, add oil, once it’s hot, add garlic and saute it until golden brown.
- Add dry coconut, roasted onions, prepared dry masala and saute it for 2-3 minutes on medium flames.
- Transfer it to a mixer grinder jar and grind it to a fine paste.
- Keep it aside for further use.
For Boiling Vegetables
- In a saucepan or handi, add water and get a quick boil.
- Add carrots, cauliflower, salt to taste and cook it for 5-6 minutes.
- Add green peas, french beans and blanch for a while.
- Strain the vegetables and keep it aside for further use.
For Veg Kolhapuri
- In a handi or sauce pot, add oil, once it’s hot, add green cardamom, mace, prepared paste and saute it for 2-3 minutes on medium flames.
- Add water, boiled vegetables and simmer it for a while.
- Add paneer, coriander stems and mix it well.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with roti or steam rice.
