Ingredients
For Cooking Rice
Water as required, पानी
Salt to taste, नमक स्वादानुसार
2 no. Bay leaf, तेज पत्ता
1 inch Cinnamon stick, दालचीनी
700 gms Sella Basmati rice (soaked for 30 minutes) सेला बासमती चावल
For Egg Masala
3-4 tbsp Ghee, घी
1 tbsp Oil, तेल
1 no. Bay leaf, तेज पत्ता
1 inch Cinnamon stick, दालचीनी
1 no. Black cardamom, दालचीनी
2 no. Green cardamom, हरी इलायची
1 no. Mace, जावित्री
3 medium Onions, sliced, प्याज
1 no. Green chillies, slit into half, हरी मिर्च
½ inch Ginger (peeled & chopped) अदरक
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp Coriander powder, धनिया पाउडर
½ cup Curd, beaten, दही
10 no. Hard boiled Eggs, उबले हुए अंडे
Salt to taste, नमक स्वादानुसार
1 tbsp Tender coriander stems, finely chopped, धनिये के डंठल
1 tsp Dry fenugreek leaves, crushed, कसूरी मेथी
1-2 tbsp Saffron water, (optional) केसर का पानी
For Egg Mixture
4-5 no. Hard boiled Eggs, grated, उबले हुए अंडे
2 no. Green chillies (less spicy & chopped) हरी मिर्च
1 tbsp Coriander leaves, roughly chopped धनिया पत्ता
1 tbsp fresh Mint leaves (roughly chopped) पुदीना पत्ता
Salt to taste, नमक स्वादानुसार
¼ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
For Assembling
Cooked Rice, पके हुए चावल
2 tbsp Ghee, घी
Grated Egg Mixture, अंडे का मिश्रण
Cooked Rice, पके हुए चावल
Remaining Egg Masala, बचे हुए अंडे का मसाला
For Garnish
Green chili (less spicy & slit into half) हरी मिर्च
Coriander sprig, धनिया पत्ता
For Raita
1 cup Curd, beaten, दही
1 no. Green chili (less spicy & chopped) हरी मिर्च
¼ inch Ginger (peeled & chopped) अदरक
1 medium Tomato, chopped, टमाटर
1 tsp Saffron water, केसर का पानी
Salt to taste, नमक स्वादानुसार
For Garnish
A pinch of roasted cumin powder, भुना हुआ जीरा पाउडर
Degi red chili powder, देगी लाल मिर्च पाउडर
Coriander sprig, धनिया पत्ता
Process
For Cooking Rice
- In a handi or sauce pot, add water, once it’s roaring boiled, add salt to taste, bay leaf, cinnamon stick, sella basmati rice and get a quick boil.
- Cover it with the lid and cook it for 7-8 minutes on high flame.
- Strain out the cooked rice and transfer it to a tray for resting.
For Egg Masala
- In a handi, add ghee, oil, once it’s hot, add bay leaf, cinnamon stick, black cardamom, green cardamom, mace and let it splutter.
- Add onions, green chillies, ginger and saute it for 2-3 minutes until golden in color.
- Add turmeric powder, degi red chili powder, coriander powder, curd and cook it for a while.
- Add hard boiled eggs, salt to taste, tender coriander stems, saffron water and cook it well until cooked well.
- Transfer half of the masala to a bowl and keep it aside for further use.
For Egg Mixture
- In a bowl, add grated boiled eggs, green chillies, coriander leaves, fresh mint leaves, salt to taste, degi red chili powder and mix it well.
- Keep it aside for further use.
For Assembling
- In the same handi, layer cooked rice and spread evenly.
- Add ghee, prepared egg mixture, cooked rice, prepared egg masala and spread evenly.
- Cover it with the lid and cook it for 10-12 minutes on low flames.
- Transfer it to a serving bowl, garnish it with green chili and coriander sprig.
- Serve hot with prepared raita.
For Raita
- In a bowl, add curd, green chili, ginger, tomato, saffron water, salt to taste and mix it well.
- Transfer it to a serving bowl, garnish it with roasted cumin powder, degi red chili powder and coriander sprig.
