Andhra style Tomato Dal Gujarati Dal Palak Dal 3 रंगों में दाल तड़का

Ingredients
For Cooking Dal
½ cup Tata Sampann unpolished Moong dal, washed, मूंग दाल
1 ½ cups Tata Sampann unpolished Urad dal, washed, उड़द की दाल
4-5 cups Water, पानी
½ tsp Turmeric powder, हल्दी पाउडर
Salt to taste, नमक स्वादअनुसार
1 ½ tbsp Ghee, घी
For Tomato Pappu Dal Tadka
2 tbsp Oil, तेल
1 tbsp Ghee, घी
½ tsp small Mustard seeds, छोटी राई
1 sprig Curry leaves, कडी पत्ते
¼ tsp dry Fenugreek seeds, मेथी दाना
2 no. dry kashmiri Red chillies, सूखी कश्मीरी लाल मिर्च
3 no. Button chillies, बटन मिर्च
1 medium Tomato, finely chopped, टमाटर
A pinch of asafoetida, हींग
Salt to taste, नमक स्वादअनुसार
¼ cup fresh Tomato puree, ताज़ा टमाटर की प्यूरी
1 ½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
¼ inch Ginger (peeled & finely chopped) अदरक
Cooked dal, पकी हुई दाल
⅓ cup Water, पानी
1 tbsp Jaggery, roughly chopped (optional) गुड़
For Garnish
Fried button chillies, तली हुई बटन मिर्च
Chili oil, मिर्च का तेल
For Palak Dal Tadka
2 tbsp Oil, तेल
1 tsp Cumin seeds, जीरा
2 no. Garlic cloves, chopped, लहसुन
A pinch of asafoetida, हींग
1 no. large Onion, finely chopped, प्याज
Salt to taste, नमक स्वादअनुसार
1 medium bunch Spinach, chopped, पालक
Little water, पानी
Cooked dal, पकी हुई दाल
⅓ cup Water, पानी
1 no. Green chili, finely chopped, हरी मिर्च
For Garnish
Coriander sprig, धनिया पत्ता
For Gujarati Dal Tadka
2-3 tbsp Ghee, घी
A pinch of Asafoetida, हींग
¼ tsp dry Fenugreek seeds, मेथी दाना
¼ tsp small Mustard seeds, छोटी राई
1 no. Clove, लौंग
½ cup Curd, beaten, दही
Cooked dal, पकी हुई दाल
½ cup Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
2 no. Green chili, slit into half, हरी मिर्च
For Garnish
Lemon, sliced, नींबू
A pinch of Garam masala powder, गरम मसाला पाउडर
A pinch of Chaat masala, चाट मसाला
Process
For Cooking Dal
- In a pressure cooker, add Tata Sampann Moong dal, Tata Sampann Urad dal, water, salt to taste, ghee and mix it well.
- Cover it with a lid and cook for 2-3 whistles or until half cooked on medium flames.
- Leave it aside to depressurise the cooker for 10 minutes.
- Mashed the dal with the help of spatula or masher and keep it aside for further use.
For Tomato Pappu Dal Tadka
- In a non-stick pan, add oil, ghee, once it’s hot, add small mustard seeds, curry leaves and let it splutter.
- Add dry fenugreek seeds, dry kashmiri red chillies, button chillies and saute it for a minute.
- Add tomatoes, a pinch of asafoetida, salt to taste, fresh tomato puree, degi red chili powder, ginger and cook it for 7-8 minutes until tomatoes get mushy.
- Add cooked dal, water and cook it for a while until cooked well.
- Transfer it to a serving bowl, garnish it with fried button chillies and chili oil.
- Serve hot with steam rice.
For Palak Dal Tadka
- In a non-stick pan, add oil, once it’s hot, add cumin seeds and let it splutter.
- Add garlic, a pinch of asafoetida and saute it for a minute until golden brown.
- Add onion, salt to taste and saute it for 2-3 minutes until translucent.
- Add spinach, water and cook it for a while until cooked well on medium flames.
- Add cooked dal, water, green chili and let it simmer for a while until it thickens.
- Transfer it to a serving bowl and garnish it with coriander sprig.
- Serve hot with roti or steam rice.
For Gujarati Dal Tadka
- In a non-stick pan, add ghee, once it’s hot, add a pinch of asafoetida, dry fenugreek seeds, small mustard seeds, clove and saute it until aromatic.
- Add curd and cook for 2-3 minutes.
- Add cooked dal, curd, salt to taste, green chili and let it simmer for 4-5 minutes on medium flames.
- Transfer it to a serving bowl, garnish it with a lemon slice, a pinch of garam masala powder and chaat masala.
- Serve hot with phulka, roti or steam rice.
