Ingredients
For Kadhi
1 ½ tbsp Ghee, घी
1 tbsp Oil, तेल
A pinch of dry Fenugreek seeds, मेथी दाना
¼ tsp Cumin seeds, जीरा
1 ½ tsp Coriander seeds, crushed, धनिये के बीज
Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट
3-4 no. dry kashmiri Red chillies, सूखी कश्मीरी लाल मिर्च
2 medium Onions, roughly sliced, प्याज
Prepared curd mixture, तैयार किया हुआ दही का मिश्रण
Salt to taste, नमक स्वादअनुसार
For Ginger Garlic Paste
5-6 no. Garlic cloves, लहसुन
1 inch Ginger (peeled & roughly chopped) अदरक
1 no. Green chili, roughly torn, हरी मिर्च
Salt to taste, नमक स्वादअनुसार
For Curd Mixture
1 cup Curd, beaten, दही
3 cups Water, पानी
2 ½ tbsp Gram flour, बेसन
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
½ cup water, पानी
Other Ingredients
Oil for frying, तेल तलने के लिए
10-12 no. Baby potatoes (washed & peeled, prick) छोटे आलू
For Masala Fried Aloo
1 tbsp Oil, तेल
Fried potatoes, तले हुए आलू
A pinch of cumin seeds, जीरा
1 ½ tsp tsp Degi red chili powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वादअनुसार
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Aloo Pyaz Ki Kadhi
- In a handi, add ghee, oil, once it’s hot, add a pinch of dry fenugreek seeds, cumin seeds and let it splutter.
- Add coriander seeds, prepared ginger garlic paste, dry kashmiri red chillies and saute it for a minute.
- Add onions and saute it well until translucent.
- Sprinkle some water, add prepared curd mixture, salt to taste and let it simmer for 7-8 minutes until cooked well on medium flames.
- Transfer it to a serving bowl, add masala fried potatoes and garnish it with coriander sprig.
- Serve hot with steam rice.
For Ginger Garlic Paste
- In a mortar pestle, add garlic, ginger, green chili, salt to taste and grind it into a coarse paste.
- Keep it aside for further use.
For Curd Mixture
- In a bowl, add curd, water, gram flour, degi red chili powder, turmeric powder and give it a good mix.
- Keep it aside for further use.
For Frying
- Take baby potatoes and prick them with the help of a fork.
- In a kadai, add oil once hot, add potatoes and fry them until golden brown.
- Transfer it to an absorbent paper and keep it aside for further use.
For Masala Fried Aloo
- In a pan, add oil, once it’s hot, add fried potatoes, a pinch of cumin seeds, degi red chili powder, salt to taste and toss it well.
- Keep it aside for further use.
