Ingredients

For Cooking Rice

Water, पानी

3 cups Sella basmati rice (soaked for 20 minutes) सेला बासमती चावल

Salt to taste, नमक स्वादअनुसार

½ tbsp Oil, तेल

 

For Egg Fried Rice

1 tbsp Oil, तेल

2 Garlic cloves, chopped, लहसुन

½ tbsp Ginger (peeled & finely chopped) अदरक

1 medium Carrot (peeled & finely chopped) गाजर

½ cup Cabbage, finely chopped, पत्तागोभी

Salt to taste, नमक स्वादअनुसार

½ tsp Sugar, चीनी

2 Green chillies (less spicy & finely chopped) हरी मिर्च

½ tsp Vinegar, सिरका

3 no. Eggs, अंडे

¼ cup French beans, chopped, फ्रेंच बींस

Cooked Rice, पका हुआ चावल

1 ½ tsp Light soy sauce, सोया सॉस

1 tsp White pepper powder, सफेद कालीमिर्च का पाउडर

¼ cup Spring onion, chopped, प्याज़ पत्ता

½ tsp White sesame seeds (optional) सफेद तिल

 

For Sauce Mixture

½ tbsp Vinegar, सिरका

2 tbsp Light soy sauce, सोया सॉस

2 tbsp Tomato ketchup, टोमेटो केचप

1 tbsp Green chili sauce, ग्रीन चिली सॉस

1 cup water, पानी

½ tsp Sugar, चीनी

 

For Sauce

½ tbsp Oil, तेल

1 Green chili (less spicy & chopped) हरी मिर्च

½ Capsicum, finely chopped, शिमला मिर्च

½ Onion, chopped, प्याज

½ inch Ginger (peeled & chopped) अदरक

2 cloves Garlic, लहसुन

Prepared Sauce mixture, तैयार किया हुआ सॉस मिश्रान

 

For Omelette

3 no. Eggs, अंडे

2-3 tbsp Water, पानी

Salt to taste, नमक स्वादअनुसार

few Coriander leaves, finely chopped, धनिया पत्ता

½ tsp Oil, तेल

 

For Garnish

Coriander sprig, धनिया पत्ता

White sesame seeds, सफेद तिल

Process

For Cooking Rice

  • In a sauce pot, add water and bring it to a roaring boil.
  • Add sella basmati rice, salt to taste, oil and cook it on high flame for 2-3 minutes.
  • Cover it with the lid and cook it for 7-8 minutes on moderate heat.
  • Strain the rice and Transfer it to a tray for resting.
  • Keep it aside for further use.

 

For Egg Fried Rice

  • In a wok or deep pan, add oil, once it’s hot, add garlic, ginger and saute it on high flame for a few seconds.
  • Add carrot, cabbage, salt to taste, sugar and saute on high flame.
  • Add green chillies, vinegar and mix it well. Add eggs and mix it together.
  • Add french beans, cooked rice and mix everything very well. Add light soy sauce, white pepper powder and stir it well.
  • Add spring onion, white sesame seeds and toss well.
  • Keep it aside for further use.

 

For Sauce Mixture

  • In a bowl, add vinegar, light soy sauce, tomato ketchup, green chili sauce, water, sugar and mix it well.
  • Keep it aside for further use.

 

For Sauce

  • In a wok or deep pan, add oil, once it’s hot, add green chili, capsicum, onion, ginger and saute it for a minute on high flame.
  • Add prepared sauce mixture and stir it well.
  • Turn off the flame and keep it aside for further use.

 

For Omelette

  • In a bowl, add eggs, water, salt to taste, coriander leaves, oil and whisk it well.
  • In a pan, add oil, once it’s hot, pour the mixture and make a thin omelet.
  • Transfer it to a plate and keep it aside for further use.

 

For Assembling

  • In a bowl, place the prepared omelette, add egg fried rice and close it from all sides.
  • Transfer it to a serving plate, cut through the middle and pour the sauce on it.
  • In a bowl, place prepared omelette, add prepared sauce and close it from all sides.
  • Add the fried rice onto the serving dish and place the gravy pocket on it.
  • Cut through it and let the sauce flow. Garnish it with coriander sprig.
  • Serve hot.
