Ingredients
For Omelette
10-12 no. Eggs, अंडे
3-4 no. Green chillies (spicy & chopped) हरी मिर्च
½ inch Ginger, grated, अदरक
Salt to taste, नमक स्वाद अनुसार
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1½ tbsp Coriander leaves, chopped, धनिया पत्ता
¼ cup Processed cheese, grated, चीज
½ tsp Oil, तेल
1 tsp Oil, for frying, तेल
For Ginger Garlic paste
3-4 no. Green chillies, less spicy, हरी मिर्च
Salt to taste, नमक स्वाद अनुसार
5-6 no. Garlic cloves, लहसुन
½ inch Ginger, अदरक
For Coating
Prepared Omlet cubes, तैयार किया हुआ ऑमलेट क्यूब्स
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
½ cup Curd, beaten, दही
1 tsp Gram Flour, बेसन
1 tsp Cornstarch, कॉर्नस्टार्च
1 tsp Rice flour, चावल का आटा
1 tsp Refined flour, मैदा
A pinch of Asafoetida, हिंग
½ tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वाद अनुसार
Oil for frying, तेल
For Tempering
½ tbsp Oil, तेल
2 sprig Curry leaves, करी पत्ता
4-5 Dry kashmiri red chilies, broken into half, सूखी कश्मीरी लाल मिर्च
1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 ½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
Fried Egg cubes, तले हुए अंडे के क्यूब्स
1 sprig Curry leaves, करी पत्ता
1 tbsp Tender Coriander stems, धनिया के डंठल
½ tsp Black peppercorns, crushed, काली मिर्च के दाने
Salt to taste, नमक स्वाद अनुसार
A pinch of Sugar, optional, चीनी
⅓ tsp Lemon juice, नींबू का रस
Garnish
Coriander sprig, धनिया पत्ता
Fried curry leaves, तले हुए करी पत्ते
Process
For Omelette
- In a large bowl, add eggs, green chillies, ginger, salt to taste, degi red chili powder, coriander leaves, processed cheese, oil and mix everything well.
- In a pan, add oil, once it’s hot, add the egg mixture, cover it with the lid and cook it for 4-5 minutes on medium flame.
- Cut it into medium size cubes and keep it aside for further use.
For Ginger Garlic paste
- In a mortar pestle, add green chilies, salt to taste, garlic cloves, ginger and make a coarse paste.
- Keep it aside for further use.
For Coating
- In a large bowl, add prepared omelette cubes, ginger garlic paste, curd, gram flour, cornstarch, rice flour, refined flour, a pinch of asafoetida, degi red chili powder, salt to taste and coat everything well.
- Keep it aside for further use.
For Frying Eggs
- In a kadai, add oil, once it’s hot, add coated egg cubes, fry until half done and transfer it to an absorbent paper.
- Re-fry the egg cubes in smoky hot oil until it’s golden in color and is crispy in texture.
- Transfer it to a plate and keep it aside for further use.
For Tempering
- In a kadai, add oil, once it’s hot, add curry leaves, dry Kashmiri red chillies, ginger garlic paste and sauté it well.
- Add degi red chili powder, fried egg cubes, curry leaves, tender coriander stem, crushed black peppercorns, salt to taste, sugar, lemon juice and toss it well.
- Transfer it to a serving dish and garnish it with coriander sprig & fried curry leaves.
- Serve hot.
