Ingredients
- 1 teaspoons olive oil
- 1 small onion, finely chopped
- 1 red bell pepper, finely chopped
- 1 cup of black beans/ kidney beans, soaked, cooked
- ½ cup French beans, cut into cubes
- 1 cup tomato puree
- 1 cup sweet corn
- 1 tbsp of taco seasoning
- 2 cups of vegetable broth
- salt and pepper to taste
- fresh coriander leaves
- Your choice of taco toppings (tortilla chips, sour cream, cheese, avocado, olives, etc.)
Process
- Heat the oil in a large pot over medium. Add the onion and pepper, season with salt and pepper and cook for 5 minutes.
- Add the black beans, tomato puree, corn, chicken and taco seasoning. Stir to combine. Add the chicken broth and bring to a simmer. Cook for 15 minutes. Taste and add additional salt and pepper if needed.
- Serve the soup immediately with your choice of taco topping
