For Dough

1 ½ cups remaining Dal tadka, बची हुई दाल तड़का

2 cups Whole wheat flour, गेहूं का आटा

½ inch Ginger (peeled & grated) अदरक

3-4 no. Garlic cloves, grated, लहसुन

2 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता

1 tsp Pickle oil, अचार का तेल


For Aam Ka Achaar

7-8 no. Raw mangoes, cut into diced, कच्चे आम

Salt to taste, नमक स्वादअनुसार

2 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर

1 tsp Asafoetida, हींग

1 tsp Split Yellow mustard seeds, पीली सरसों के बीज

1 ⅓ cups Mustard oil, सरसों का तेल

1 tbsp Fennel seeds, सौंफ

½ tsp dry Fenugreek seeds, मेथी दाना

½ tbsp Cumin seeds, जीरा

½ tbsp small Mustard seeds, छोटी राई

½ tbsp Nigella seeds, कलौंजी

1 cup Vinegar, सिरका

1 cup Jaggery, गुड़

4-5 no. dry Kashmiri red chillies, सूखी कश्मीरी लाल मिर्च


For Dal Paratha

Prepared Paratha, तयार किया हुआ पराठा

1 tsp Ghee, घी

1 tsp Pickle oil, अचार का तेल


Other Ingredients

Ghee (for greasing) घी

Butter, cubed, मक्खन


For Garnish

Butter, cubed, मक्खन

0nion, cut into quarters, प्याज

Green chillies, हरी मिर्च

Curd, दही

Prepared mango pickle, तयार किया हुआ आम का अचार


For Dough

  • In a parat, add leftover dal, whole wheat flour and knead it well.
  • Add ginger, garlic, fresh coriander leaves, pickle oil and knead it until soft.
  • Cover it with a muslin cloth and keep it aside to rest for a while.


For Aam Ka Achaar

  • In a parat, add raw mango, salt to taste, degi red chili powder, asafoetida, split mustard seeds and give it a good mix.
  • In a kadai, add mustard oil, once it’s smoky hot, add fennel seeds, fenugreek seeds, cumin seeds, mustard seeds, nigella seeds and let it splutter for a minute.
  • Add vinegar, jaggery, kashmiri red chillies, marinated raw mangoes and mix it well.
  • Cover it with a lid and cook it for a while until soft.
  • Transfer it to an airtight container and store it well.
  • Serve it with prepared dal paratha.


For Dal Paratha

  • Take a lemon size ball and flatten it well. Add pickle oil and close it again.
  • Roll it in any desired shape and keep it aside for further use.
  • In a tawa, add oil, once it’s hot, add paratha and cook it well from both the sides until golden brown.
  • Transfer it to a serving dish and garnish it with butter.
  • Serve hot with onion, green chillies, curd and prepared pickle.
