Ingredients
For Stuffing
2 medium Radish (grated), मूली
½ cup Radish Leaves (chopped), मूली के पत्ते
Salt to taste, नमक स्वादअनुसार
½ tsp Carom seeds, अजवाइन
1 no. Green chilli (chopped), हरी मिर्च
½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
¼ tsp Oil, तेल
¼ tsp Lemon juice, नींबू का रस
A pinch of cumin powder, जीरा पाउडर
For Dough
2 cups Whole wheat flour, गेहूं का आटा
Salt to taste, नमक स्वादअनुसार
1 tsp Ghee, घी
Chilled water as required, ठंडा पानी
1 tsp Oil (after kneading) तेल
For Gajar ka Achar
2 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
1 tsp Sugar, चीनी
2 medium Carrots (peeled & cut into batons) गाजर
4-5 no. Green chillies (less spicy & cut into half), हरी मिर्च
2-3 tbsp Prepared masala, तैयार किया हुआ मसाला
½ cup Vinegar, सिरका
2 tbsp Jaggery, गुड़
Salt to taste, नमक स्वादअनुसार
2-3 heaped tbsp smoked Mustard oil, सरसों का तेल
For Masala
1 tbsp Coriander seeds, धनिये के बीज
½ tbsp Fennel seeds, सौंफ
½ tbsp Cumin seeds, जीरा
¼ tsp Fenugreek seeds, मेथी दाना
10-12 no. Black peppercorns, काली मिर्च के दाने
1 tsp small Mustard seeds, छोटी राई
1 tbsp Yellow mustard seeds, पीले सरसों के बीज
¼ tsp Nigella seeds, कलौंजी
1 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
Salt to taste, नमक स्वादअनुसार
For Mooli Ka Raita
Prepared mooli mixture तैयार किया हुआ मूली मिश्रण
2 cups Curd (beaten), दही
Salt to taste, नमक स्वादअनुसार
Other Ingredients
Ghee for greasing, घी
For Garnish
Coriander sprig, धनिया पत्ता
Butter (cubed), मक्खन
Process
For Stuffing
- In a medium bowl, add grated radish, radish leaves, salt to taste and leave it for 5-10 minutes.
- Squeeze out the excess water from the radish and transfer it to a bowl.
- In the same bowl, add carom seeds, green chilli, degi red chilli powder, oil, lemon juice and cumin powder.
- Mix it well and keep it aside for further use.
For Dough
- In a bowl, add whole wheat flour, salt to taste, ghee, chilled water and knead it into a semisoft dough.
- Add oil and knead it nicely.
- Cover it with damp cloth and keep it aside to rest for a while.
For Cooking Paratha
- Divide the dough into medium lemon size balls and make a cavity in the middle.
- Add a spoonful of prepared stuffing in the cavity, seal the edges and roll it with the help of a rolling pin.
- Keep it aside for further use.
- On a tawa, add ghee, once it’s hot, place prepared rolled paratha and cook it on both the sides.
- Transfer it to a serving dish and garnish it with butter.
- Serve hot with gajar ka achar.
For Gajar ka Achar
- In a pan, heat water, add salt to taste, sugar, carrots and boil it for 2-3minutes on medium heat.
- In another pan, add vinegar, jaggery and cook it for 2 minutes. Keep aside for further use.
- In a bowl, add green chillies, cooked carrots, prepared masala, cooked vinegar & jaggery mixture along with smoked mustard oil, salt and give it a good stir.
- Transfer it to an airtight container and store it well.
For Masala
- In a tray, add coriander seeds, fennel seeds, cumin seeds, fenugreek seeds, black peppercorns, mustard seeds, yellow mustard seeds, nigella seeds, degi red chilli powder, turmeric powder and salt.
- Transfer the spice into a mixer grinder jar and grind it into a fine powder.
- Keep it aside for further use.
For Mooli ka Raita
- In a bowl, add prepared mooli mixture, curd and salt to taste.
- Mix it well and keep aside for further use.
