Ingredients

For Chicken Marination

2 cups Buttermilk, छाछ

Salt to taste, नमक स्वादअनुसार

1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

1 kg Chicken thighs (boneless) चिकन

 

For Instant BBQ sauce

15-20 no. dry Kashmiri red chillies (deseed & soaked) सूखी कश्मीरी लाल मिर्च

8-9 no. Garlic cloves, लहसुन

1 inch Ginger (peeled) अदरक

1 ½ tbsp Sugar, चीनी

¼ cup Dark soy sauce, सोया सॉस

3 tbsp Red chili sauce, रेड चिली सॉस

¼ cup Vinegar, सिरका

¼ cup Tender coriander stems (with roots & roughly torn) धनिये के डंठल और जड़ें

 

For White Kimchi

1 small Cabbage, cut into diagonally, पत्तागोभी

1 medium Cucumber, sliced, ककड़ी

Salt to taste, नमक स्वादअनुसार

2-3 tbsp Sugar, चीनी

3-4 no. Garlic cloves, grated, लहसुन

2 no. Green chillies (less spicy & chopped) हरी मिर्च

2 heaped tbsp Vinegar, सिरका

¼ cup Spring onion, chopped, प्याज़ पत्ता

 

For Purple Kimchi

1 small Purple cabbage, cut into diagonally, पर्पल कैबेज

1 no. large Onion, roughly sliced, प्याज

2 heaped tbsp Vinegar, सिरका

Salt to taste, नमक स्वादअनुसार

1 inch Ginger (peeled & grated) अदरक

2-3 tbsp Sugar, चीनी

2 tsp Chilli flakes, चिल्ली फलैक्स

1 ½ tbsp White sesame seeds, सफेद तिल

 

For Korean Sauce

1 ½ tbsp Oil, तेल

1 tsp White sesame seeds, सफेद तिल

⅓ cup Tomato ketchup, टोमेटो केचप

Prepared instant bbq sauce, तयार किया हुआ बारबेक्यू सॉस

2 cups Water, पानी

 

For Dry Coating

¼ cup Rice flour, चावल का आटा

½ cup Refined flour, मैदा

½ cup Cornstarch, कॉर्नस्टार्च

1 tbsp Onion powder, अनियन पाउडर

1 tbsp Garlic powder, गार्लिक पाउडर

Salt to taste, नमक स्वादअनुसार

 

Other Ingredients

Oil for frying, तेल तलने के लिए

 

For Assembling

Burger buns, बर्गर बन्स

Mayonnaise, मेयोनेज़

White kimchi, सफ़ेद किमची

Purple kimchi, पर्पल किमची

Prepared sauce, तयार किया हुआ सॉस

Fried chicken, तला हुआ चिकन

Cheese slice, optional, चीज़

Purple kimchi, पर्पल किमची

Process

For Chicken Marination

  • In a bowl, add buttermilk, salt to taste, ginger garlic paste, chicken and mix it well.
  • Keep it aside to marinate for a while.

For Instant Bbq Sauce

  • In a bowl, add soaked dry kashmiri red chillies, garlic, ginger, sugar, dark soy sauce, red chili sauce, vinegar, tender coriander stems and mix it well.
  • Transfer it to a mixer grinder jar and grind it smoothly.
  • Keep it aside for further use.

For White Kimchi

  • In a bowl, add cabbage, cucumber, salt to taste, sugar, garlic, green chillies, vinegar and give it a good mix. Leave it aside for further use.
  • Squeeze out the water from the kimchi and transfer it to the bowl.
  • Add spring onion and mix it well.
  • Keep it aside for further use.

For Purple Kimchi

  • In a bowl, add purple cabbage, onion, vinegar, salt to taste, ginger, sugar and give it a good mix. Leave it aside for further use.
  • Squeeze out the water from the kimchi and transfer it to the bowl.
  • Add chili flakes, white sesame seeds and mix it well.
  • Keep it aside for further use.

 

For Korean Sauce

  • In a pan, add oil, once it’s hot, add white sesame seeds and saute it for a minute.
  • Add tomato ketchup, prepared instant bbq sauce, water and give it a good mix.
  • Simmer it well for 20-25 minutes on low flames.
  • Transfer it to a bowl and keep it aside for further use.

 

For Dry Coating

  • In a plastic container, add rice flour, refined flour, cornstarch, onion powder, garlic powder, salt to taste and give it a good mix.
  • Add marinated chicken and coat it well on all sides.
  • Transfer it to a tray and Keep it aside for further use.

 

For Frying

  • In a non-stick kadai, add oil, once it’s hot, place the strainer, add chicken and fry it until half cooked.
  • Refry the chicken in hot oil and cook for 1-2 minutes on high flame until golden brown.
  • Transfer it to a tray and keep it aside for further use.

 

For Assembling

  • Coat the chicken with prepared sauce with the use of a brush or spoon.
  • Take burger buns, cut into half, apply mayonnaise, place white kimchi, purple kimchi, coated chicken, cheese slice, purple kimchi, pour some prepared sauce and cover it with another slice of the bun.
  • Serve hot with prepared sauce and fries.
