Ingredients
1 tbsp coconut oil/ vegetable oil
1 tsp mustard seeds
1 medium onion, chopped
10-12 curry leaves
1 tsp garlic, chopped
1 tsp ginger, chopped
1 tbsp green chilies, chopped
700 gms mixed vegetable, cut into cubes (drumsticks, brinjal, pumpkin, raw banana, cucumber)
1 tbsp coriander powder
½ tsp turmeric
1 cup fresh coconut, grated
1 cup fresh coconut milk
1 cup water
Garnish with coriander leaves
Process
- Cut all the vegetables and keep aside.
- Heat oil in a kadhai and crackle some mustard seeds.
- Now add onion, curry leaves, garlic, ginger and green chilies. Sauté until it turn light pink in color.
- Now add vegetable and stir for 2-3 minutes. Add salt, turmeric, ground coriander and fresh coconut, sauté for a minute.
- Now add coconut milk and water. Cover and cook until vegetables are cooked.
- Serve hot with rice.

Chef- I love all your recipies and I have to admit I have tried all veg North Indian recipies and never was I disappointed and felt proud of myself . But I have point out here- Avial is not made like this. Being a Malayalee I couldn’t ignore.
1) mustard is not used in avail- no tadka at all
2) most of places don’t use garlic and ginger (garlic still people use, but no ginger at all)
3) ground corriander is not used. What is used is ground cumin seeds with coconut (they lightly pound it or slight mixed with hand and add to the half cooked veggies)
4) coconut milk is not used at all – you could add curd or cut mangoes for sourness
5) the only garnish is curry leaves and coconut oil in the end
Don’t take this comment wrong but people will say ‘ranveer ne correct recipe bathaya nahi’

I totally agree and thanks for suggesting the right method and ingredient, certainly it will brig the preparation closer to authentic. But let me tell you one thing , the twist which Ranveer has given hare will make the dish more palatable, and acceptable outside Malayalee world. Hope you accept this bold Maneuverability.
