Ingredients

For Roasting Eggplant

4 no. medium size Eggplant, बैंगन

10-12 no. Garlic cloves, लहसुन

2-3 tbsp Mustard oil to brush, सरसो का तेल

 

For Baingan Bharta

1 tbsp Mustard oil, सरसो का तेल

2 tbsp Oil, तेल

1 tsp Cumin seeds, जीरा

2-3 no. Garlic cloves, chopped, लहसुन

4 medium Onions, chopped, प्याज

Salt to taste, नमक स्वादअनुसार

½ tsp Turmeric powder, हल्दी पाउडर

1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

½ tsp Coriander powder, धनिया पाउडर

2-3 no. Green chillies (less spicy & chopped) हरी मिर्च

1 tbsp Tender coriander stems, finely chopped, धनिया के डंठल

2 medium Tomato, chopped, टमाटर

1 tsp Coriander powder, optional, धनिया पाउडर

1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

Roasted Eggplants (peeled & chopped) भुने हुए बैंगन

2 tbsp Coriander leaves, finely chopped, धनिया पत्ता

 

For Garnish

Tomato wedge, टमाटर

Green chili, slit, हरी मिर्च

Coriander sprig, धनिया पत्ता

Process

For Roasting

  • Take an eggplant, give it deep cuts, place garlic into the cuts and apply mustard oil.
  • Place it on the cooking rack and roast the eggplants well until it’s tender.
  • Transfer it to a tray or a parat and peel the skin gently.
  • Chop it well and keep it aside for further use.

 

For Baingan Bharta

  • In kadai, add mustard oil, oil, once it’s hot, add cumin seeds and let it splutter.
  • Add garlic, onions, salt to taste, turmeric powder, degi red chili powder, coriander powder and saute it for a while.
  • Add green chillies, coriander stems, tomato, coriander powder, degi red chili powder and cook it for 2-3 minutes on medium flames.
  • Add roasted eggplant and cook it for a while.
  • Finish it with some coriander leaves and mix it well.
  • Transfer it to a serving dish, garnish it with tomato, green chili and coriander sprig.
  • Serve hot with roti.
