Here's my take on the trending Tacos recipe! I've given methods for both Chicken & Paneer variants in normal Enchilada and Smashed types. Enjoy it this weekend!

Ingredients

For Paneer Rajma Filling

500 gms Paneer, рдкрдиреАрд░

2 cups Boiled Rajma, рдЙрдмрд▓рд╛ рд╣реБрдЖ рд░рд╛рдЬрдорд╛

1 tbsp Chilli flakes, рдЪрд┐рд▓реА рдлреНрд▓реЗрдХреНрд╕

┬╜ tbsp Oregano (optional), рдСрд░реЗрдЧреИрдиреЛ

1 tsp Tender Coriander stems (finely chopped), рдзрдирд┐рдпрд╛ рдХреЗ рдбрдВрдард▓

┬╜ tbsp Ginger Garlic paste, рдЕрджрд░рдХ рд▓рд╣рд╕реБрди рдХрд╛ рдкреЗрд╕реНрдЯ

Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░

 

For Chicken Filling

2 large Boiled Potatoes, рдЙрдмрд▓реЗ рд╣реБрдП рдЖрд▓реВ

1 cup Chicken mince, рдЪрд┐рдХрди рдХреАрдорд╛

1 tbsp Ginger Garlic paste, рдЕрджрд░рдХ рд▓рд╣рд╕реБрди рдХрд╛ рдкреЗрд╕реНрдЯ

2 no. Green Chillies (less spicy & finely chopped), рд╣рд░реА рдорд┐рд░реНрдЪ

1 heaped tbsp fresh Coriander leaves (finely chopped), рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛

Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░

┬╝ tsp Garam masala powder, рдЧрд░рдо рдорд╕рд╛рд▓рд╛ рдкрд╛рдЙрдбрд░

┬╝ tsp Coriander powder, рдзрдирд┐рдпрд╛ рдкрд╛рдЙрдбрд░

1 tbsp Degi Red Chilli powder, рджреЗрдЧреА рд▓рд╛рд▓ рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░

 

For Sauce

4 no. Green Chillies (less spicy & roughly chopped), рд╣рд░реА рдорд┐рд░реНрдЪ

┬╝ cup fresh Mint leaves, рдкреБрджреАрдиреЗ рдХрд╛ рдкрддреНрддрд╛

┬╜ inch Ginger (peeled & julienned), рдЕрджрд░рдХ

2 no. Garlic cloves (crushed), рд▓рд╣рд╕реБрди

1 heaped tbsp Mayonnaise, рдореЗрдпреЛрдиреЗрдЬрд╝

┬╝ cup Tomato ketchup, рдЯреЛрдореЗрдЯреЛ рдХреЗрдЪрдк

2 tbsp fresh Coriander leaves (roughly torn), рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛

1 tsp Oil, рддреЗрд▓

For Salad

┬╜ cup Hung curd, рдЯрдВрдЧрд╛ рд╣реБрдЖ рджрд╣реА

1 heaped tbsp Mayonnaise, рдореЗрдпреЛрдиреЗрдЬрд╝

1 heaped tbsp Chilli flakes, рдЪрд┐рд▓реА рдлреНрд▓реЗрдХреНрд╕

2-3 tbsp Processed Cheese (grated), рдЪреАрдЬ

1 large Capsicum (thinly julienned), рд╢рд┐рдорд▓рд╛ рдорд┐рд░реНрдЪ

┬╜ medium Cucumber (thinly julienned), рдЦреАрд░рд╛

┬╜ medium Onion (thinly sliced), рдкреНрдпрд╛рдЬ

3-4 no. Green Chillies (less spicy & chopped), рд╣рд░реА рдорд┐рд░реНрдЪ

2-3 tbsp fresh Coriander leaves (roughly chopped), рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛

For Assembling

For Garnish

Coriander sprig, рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛

Process

For Paneer & Rajma Filling

  • In a bowl, add paneer, boiled rajma, chilli flakes, oregano, tender coriander stems, ginger garlic paste, salt to taste and give it a good mix.
  • Transfer it into the mixer grinder jar and grind it into the coarsely paste.
  • Keep it aside for further use.

For Chicken Filling

  • In a bowl, add chicken mince, boiled potatoes, ginger garlic paste, green chillies, fresh coriander leaves, salt to taste, garam masala powder, coriander powder, degi red chili powder and give it a good mix.
  • Leave it aside for further use.

For Sauce

  • In a bowl, add green chillies, fresh mint leaves, ginger, garlic, mayonnaise, tomato ketchup, fresh coriander leaves, oil and give it a good mix.
  • Transfer it into the mixer grinder jar and grind it into the smooth fine paste.
  • Keep it aside for further use.

For Salad

  • In a bowl, add hung curd, mayonnaise, chilli flakes, cheese, capsicum, cucumber, onion, green chillies, fresh coriander leaves and give it a good mix.
  • Keep it aside for further use.

For Cooking Roti

  • Take prepared dough, divide into small lemon size balls and flatten it with a rolling pin to make roti.
  • Add ghee on tawa, place prepared roti and cook it on both sides for 2-3 minutes or until it’s half cooked.
  • Remove it into the dish and keep it aside for further use.

For Assembling

  • Take cooked roti, add chicken filling and spread it evenly, transfer it into the pan, add butter and cook for 4-5 minutes or until it’s cooked.
  • Remove it into the dish, apply prepared sauce, add a spoonful of prepared salad and fold it well to make taco.
  • Take cooked roti, add paneer rajma filling and spread it evenly, transfer it into the pan, add butter and cook for 2-3 minutes or until it’s cooked.
  • Remove it into the dish, apply prepared sauce, add a spoonful of prepared salad, add grated cheese and fold it well to make taco.
  • Transfer it into the serving dish and garnish it with coriander sprig.

Serve hot with prepared sauce and prepared salad.
