Ingredients
For Paste
1 inch Ginger (peeled & roughly sliced), अदरक
1-2 tbsp Tender Coriander stems (chopped), धनिया के डंठल
5-6 no. Garlic cloves, लहसुन
3-4 no. Green Chillies (roughly chopped), हरी मिर्च
⅓ cup fresh Coriander leaves (chopped), धनिया पत्ता
1 tsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 tbsp Coriander powder, धनिया पाउडर
1 tsp Cumin seeds, जीरा
Salt to taste, नमक स्वादअनुसार
For Surati Paneer Ghotala
2 tbsp Ghee, घी
1-2 tbsp Oil, तेल
Prepared paste, तैयार किया हुआ पेस्ट
1 ½ medium Onions (chopped), प्याज
1 large Capsicum (chopped), शिमला मिर्च
1 ½ medium Tomatoes (chopped), टमाटर
1 tbsp Butter (cubed), मक्खन
Marinated Paneer, मैरिनेटेड पनीर
1 cup Water, पानी
⅓ cup Water, पानी
Fried Paneer (chopped), तला हुआ पनीर
2-3 tbsp fresh Coriander leaves (chopped), धनिया पत्ता
½ cup Cheese (grated), चीज़
For Paneer Marination
200 gms Paneer (cut into thin slabs), पनीर
1-2 tsp Garam masala, गरम मसाला
Salt to taste, नमक स्वादअनुसार
½ tsp Oil
600 gms Paneer (grated), पनीर
Salt to taste, नमक स्वादअनुसार
1 heaped tbsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर
For Frying Paneer
2-3 heaped tbsp Oil, तेल
Marinated Paneer, मैरिनेटेड पनीर
For Garnish
Fried Paneer, तला हुआ पनीर
Butter (cubed), मक्खन
Coriander sprig, धनिया पत्ता
Process
For Paste
- In a bowl, add ginger, tender coriander stems, garlic, green chillies, fresh coriander leaves.
- Add degi red chilli powder, turmeric powder, coriander powder, cumin seeds and salt to taste.
- Transfer it into the mixer grinder jar and grind it into the smooth fine paste.
- Keep it aside for further use.
For Surati Paneer Ghotala
- In a shallow tawa or handi, add ghee, oil, once it’s hot, add prepared paste and cook for 7-8 minutes until oil separates from the masala.
- Add onions, capsicum, tomatoes, butter and let it cook for another 4-5 minutes or until it’s cooked.
- Add water to adjust the consistency, add fried paneer and cook for a while until it’s cooked.
- Finish it with fresh coriander leaves, cheese and give it a good mix.
- Transfer it into the serving dish, garnish it with fried paneer, butter and coriander sprig.
- Serve hot with ladi pav and roti.
For Paneer Marination
- In a tray, place paneer slabs, sprinkle some garam masala, salt to taste, oil and marinate well.
- In a separate bowl, add grated paneer, salt to taste, degi red chilli powder and give it a good mix.
- Keep it aside for further use.
For Frying Paneer
- In a pan, add oil, once it’s hot, add marinated paneer slabs and fry them until it’s light golden in color and crispy on texture.
- Remove it into the absorbent sheet and keep it aside for further use.
