Tandoori Cheela  पहले ना खाया होगा ऐसा नायाब चीला मिक्स वेज बेसन का चीला Recipe - Ranveer Brar


For tandoori masala

1 tsp Cumin seeds , जीरा

2 tsp Coriander seeds , धनिया

2 Black Cardamom , बड़ी इलायची

3-4 Cloves , लॉन्ग

1 tbsp Black pepper , काली मिर्च

½ tsp Mustard seeds , सरसों के बीज

1 tbsp Kasuri methi , कसूरी मेथी

¼ tsp Carom seeds, अजवाइन

¼ tsp Fenugreek seeds , मेथी दाना

Salt to taste , नमक स्वाद अनुसार

2-3 tbsp Deggi red chilli powder , देगी लाल मिर्च पाउडर

1 tsp Dried mango powder , आमचूर पाउडर

¼ tsp Asafoetida, हींग

½ tsp Chaat masala , चाट मसाला

For tandoori marination

3 tbsp prepared tandoori masala +from above recipe)

1 ½  big cup Curd , दही

1 tbsp Ginger-Garlic paste , अदरक लहसुन का पेस्ट

1 tbsp Mustard oil , सरसों का तेल

1 Coal , कोयला

2-3 Cloves , लॉन्ग

1 tsp Ghee , घी

For filling

¼ small Cauliflower, chopped , फुल मूवी

1 small Carrot, chopped , गाजर

1 medium Capsicum, chopped , शिमला मिर्च

¼ small Cabbage, chopped , पत्ता गोभी

1 medium Onion, sliced , प्याज

½: prepared marination , तैयार किया हुआ मैरीनेशन

For cheela

¾ cup Besan , बेसन

½ prepared tandoori marination, तैयार किया हुआ मैरीनेशन

Water as required , पानी

A pinch of Baking soda , खाने का सोडा

1 tbsp Oil , तेल

1 tsp Ghee (per cheela)घी

½ cup Cheese, grated, चीज

For serving

Green chutney

Fresh veggies salad


For tandoori masala

  • In a pan add cumin seeds, coriander seeds, black cardamom, cloves, black pepper, mustard seeds, Kasuri methi and roast them properly. Remove and cool a little.
  • Now add this to a grinder jar with some salt and make a fine powder.
  • Remove it in a bowl and add deggi red chilli powder, dried mango powder, asafoetida, chaat masala and mix everything properly.

For marination

  • In a bowl add the prepared tandoori masala, curd, ginger-garlic paste, mustard oil and mix it properly.
  • Meanwhile keep a coal on the flames to burn. Once hot keep it in a small bowl add cloves and ghee.
  • Place it in the bowl of mixture and cover it for 5-6 minutes.

For filling

  • In a bowl add all the chopped vegetables and the prepared marination and mix it will, keep aside for 10 minutes.
  • Now heat a pan on high heat and saute the marinated vegetables for 4-5 minutes (and do char them a little).

For cheela

  • In a bowl add besan, prepared marination, water, baking soda, oil and make a smooth batter.
  • Heat a flat pan on medium heat and add a big spoon of batter and spread it evenly, add some ghee and cook until golden brown.
  • Now on one side add the filling and some grated cheese and fold it .
  • Serve it with green chutney and veggies salad
