Ingredients

For Batter

1 inch Ginger (peeled & roughly chopped) अदरक

3 no. Green chillies (less spicy & roughly chopped) हरी मिर्च

2-3 no. Garlic cloves, roughly chopped, लहसुन

2 cups Yellow moong dal (wash & soaked overnight) पीली मूंग दाल

Salt to taste, नमक स्वादअनुसार

1 tbsp Sugar, चीनी

 

For Amchur Mixture

1 ½ cups Water, पानी

½ cup dry Mango powder, आमचूर पाउडर

 

For Amchur Chutney

1 ½ tbsp Oil, तेल

¼ tsp Cumin seeds, जीरा

¼ tsp Fennel seeds, सौंफ

A pinch of Asafoetida, हींग

Prepared amchur mixture, तैयार किया हुआ आमचूर का मिश्रण

Salt to taste, नमक स्वादअनुसार

3 heaped tbsp Sugar, चीनी

 

For Paste

10-12 no. Garlic cloves, लहसुन

1 inch Ginger (peeled & roughly chopped) अदरक

4 no. Green chillies (less spicy & roughly torn) हरी मिर्च

¼ cup fresh Coriander leaves, roughly torn, धनिया पत्ता

Salt to taste, नमक स्वादअनुसार

 

For Dahi Wali Chutney

1 ½ cups Curd, beaten, दही

Prepared paste, तैयार किया हुआ पेस्ट

 

For Moonglet

2 no. medium Carrots (peeled & grated) गाजर

4-5 no. Green chillies, finely chopped, हरी मिर्च

¼ tsp Carom seeds, अजवायन

2-3 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता

Prepared batter, तैयार किया हुआ मिश्रण

 

For Stuffing

2 no. Green chillies, finely chopped, हरी मिर्च

3-4 tbsp Processed cheese, grated, चीज़

1 tbsp Prepared amchur chutney, तैयार की हुई आमचूर की चटनी

2-3 tbsp Paneer, grated, पनीर

 

Other Ingredients

2 tsp Ghee, घी

2 tbsp Butter, cubed, मक्खन

Process

For Batter

  • In a large bowl, add ginger, green chilies, garlic cloves, yellow moong dal, salt to taste and sugar.
  • Transfer it to a grinder jar and grind it to a smooth paste.
  • Keep aside for further use.

 

For Amchur Mixture

  • In a bowl, add water, dry mango powder and mix well.
  • Keep aside for further use.

 

For Amchur Chutney

  • In a sauce pot, add oil, once it is hot, add cumin seeds, fennel seeds and let it splutter well.
  • Add asafoetida, prepared amchur mixture, salt to taste, sugar and boil it well for a while until thickens.
  • Serve it with a prepared moonglet.

 

For Paste

  • In a mortar pestle, add garlic cloves, ginger, green chillies, salt to taste, coriander leaves, salt to taste and grind it smoothly.
  • Keep it aside for further use.

 

For Dahi Wali Chutney

  • In a bowl, add curd, add prepared paste and give it a good mix.
  • Serve chilled with a prepared moonglet.

 

For Moonglet

  • In a bowl, add carrot, green chili, carom seeds, coriander leaves, prepared batter and mix it well. Keep it aside to rest for 20-25 minutes.
  • In a pan, add oil, once it’s hot, add a ladleful of batter and cook it for 3-4 minutes until golden in color.
  • Top it up with green chillies, processed cheese, prepared amchur chutney, paneer and cover it with a ladleful of batter.
  • Flip it, add butter and cook it for 4-5 minutes until crispy and golden brown.
  • Transfer it to a serving dish and garnish it with coriander sprig.
  • Serve hot with dahi wali chutney and amchur chutney.
