For Frying Arbi
1 ½ kg Arbi (par boiled & peeled) उबली हुई अरबी
Oil for frying, तलने के लिए तेल
For Tuk Masala
1 ½ heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
2 tsp Coriander powder, धनिया पाउडर
1 tsp Cumin powder, जीरा पाउडर
2 tbsp dry Mango powder, आमचूर पाउडर
Salt to taste, नमक स्वादअनुसार
For Arbi Tuk
Fried Arbi, तली हुई अरबी
Prepared Tuk Masala, तैयार किया हुआ टुक मसाला
For Dahi Arbi
2 tbsp Oil, तेल
1 tbsp Ghee, घी
3 no. Cloves, लौंग
A pinch of asafoetida, हींग
2 no. dry Kashmiri red chillies, broken into half, सूखी कश्मीरी लाल मिर्च
1 large Onion, chopped, प्याज
Prepared curd mixture, तयार किया हुआ दही का मिश्रण
Salt to taste, नमक स्वादअनुसार
1 cup Water, पानी
1 medium Tomato, diced, टमाटर
1 tsp Sugar, चीनी
Fried Arbi, तली हुई अरबी
For Curd Mixture
1 ½ cups Curd, beaten, दही
1 ½ tsp Turmeric powder, हल्दी पाउडर
1 heaped tsp Degi red chili powder, देगी लाल मिर्च पाउडर
2 tsp Coriander powder, धनिया पाउडर
½ tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Frying Arbi
- Take boiled arbi, flatten it with the help of a bowl or a napkin and keep it in a tray for further use.
- Heat oil in a non-stick kadai, add flattened arbi and fry it until half cooked.
- Transfer it to a tray for a minute and refry it on high flames until golden brown.
- Transfer it to an absorbent paper and keep it aside for further use.
For Tuk Masala
- In a bowl, add degi red chili powder, turmeric powder, coriander powder, cumin powder, dry mango powder, salt to taste and give it a good mix.
- Keep it aside for further use.
For Arbi Tuk
- In a tray, add fried arbi, sprinkle prepared tuk masala and gently toss it well.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with green chutney and chai.
For Dahi Arbi
- In a handi, add oil, ghee, once it’s hot, add cloves, a pinch of asafoetida, dry red chillies and saute it for a minute.
- Add onion and cook it for a while until translucent.
- Add prepared curd mixture and cook it for 5-6 minutes on medium flames.
- Add salt to taste, water to adjust the consistency, tomato, sugar and give it a quick boil.
- Transfer it to a serving dish, add fried arbi and garnish it with coriander sprig.
- Serve hot with steam rice.
For Curd Mixture
- In a bowl, add curd, turmeric powder, degi red chili powder, coriander powder, ginger garlic paste and give it a good mix.
- Keep it aside for further use.
