Ingredients
For Soaking Dal Rice
2 cups Yellow Moong dal, washed, मूंग की दाल
2 cups short Grain rice, चावल
2-3 cups Water, पानी
For Pumpkin Sabji
½ cup Mustard oil, सरसों का तेल
8-9 no. dry Red chillies, सूखी लाल मिर्च
1 ½ tbsp Cumin seeds, जीरा
1 tsp Onion seeds, कलौंजी
1 tbsp Fennel seeds, सौंफ
¼ tsp dry Fenugreek seeds, मेथी दाना
1 small Pumpkin, cut into large pieces, कद्दू
Salt to taste, नमक स्वादअनुसार
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
A pinch of asafoetida, हींग
½ tsp Turmeric powder, हल्दी पाउडर
Water, पानी
1 inch Ginger (peeled & roughly chopped, crushed) अदरक
¼ cup jaggery, roughly chopped, गुड़
⅓ cup Tamarind paste, इमली का पेस्ट
Little Water, पानी
1 no. Green chili (less spicy & roughly torn) हरी मिर्च
For Dal Khichdi
2-3 heaped tbsp Ghee, घी
½ tbsp Cumin seeds,जीरा
Soaked Dal Chawal, भीगे हुए दाल चावल
6-7 cups Water, पानी
½ tsp Turmeric powder, हल्दी पाउडर
A pinch of asafoetida, हींग
A pinch of degi red chili powder, देगी लाल मिर्च पाउडर
Water, पानी
Salt to taste, नमक स्वादअनुसार
2 tbsp Ghee, घी
Salt to taste, नमक स्वादअनुसार
2 tbsp Ghee, घी
For Batter
1 ½ cups Gram flour, बेसन
½ tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
½ tsp Turmeric powder, हल्दी पाउडर
¼ cup Rice flour, चावल का आटा
1 cup Water, पानी
Other ingredients
Oil for frying, तेल तलने के लिए
10-12 no. Pumpkin flowers, कद्दू के फूल
2-3 no. Papad, पापड़
For Garnish
Coriander sprig, धनिया पत्ता
Ghee, घी
Roasted papad, पापड़
Green chili, हरी मिर्च
Process
For Soaking Dal Rice
- In a bowl, add yellow moong dal, short grain rice and rinse it well.
- Add water as required and keep it aside for 20-25 minutes.
For Pumpkin Sabji
- In a handi, add mustard oil, once it’s smoky hot, add dry red chillies, cumin seeds, onion seeds, fennel seeds, dry fenugreek seeds and let it splutter well.
- Add pumpkin, salt to taste and cook it for a while until half cooked.
- Add degi red chili powder, a pinch of asafoetida, turmeric powder, water and mix it well.
- Add ginger, jaggery, tamarind paste and give it a good mix..
- Cover it with a lid and let it cook for 20-25 minutes on medium flames.
- Finish it with a little water, green chillies and mix it gently.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with prepared dal khichdi, pumpkin fritters and roasted papad.
For Dal Khichdi
- In a handi, add ghee, once it’s hot, add cumin seeds, soaked dal rice and saute it for a minute.
- Add water, turmeric powder, a pinch of asafoetida, a pinch of degi red chili powder, water, salt to taste, ghee and give it a good.
- Cover it with the lid and let it cook for 15-20 minutes on medium flames until cooked well.
- Finish it with salt to taste, ghee and give it a gentle mix.
- Transfer it to a serving dish, garnish it with ghee, roasted papad and green chillies.
- Serve hot with prepared pumpkin sabji.
For Batter
- In a bowl, add gram flour, ginger garlic paste, turmeric powder, rice flour, water and make a smooth batter.
- Keep it aside for further use.
For Frying
- Take the pumpkin flowers, dip into the batter and drop in hot oil.
- Fry them for 4-5 minutes until it’s golden brown and crispy
- Transfer it to a tray or absorbent paper and serve hot.
