
Ingredients
Dabeli Masala
1 dry kashmiri red chilli / कश्मीरी लाल मिर्च
1 tsp coriander powder/ धनिया पाउडर
½ tsp cumin seeds/ जीरा
1 inch cinnamon/ दालचीनी
2-3 cloves/ लौंग
For Potato Filling
1 tbsp oil / तेल
1 tsp hing/ हिंग
1 medium onion, chopped/ प्याज, कटा हुआ
3-4 potato, well mashed/
prepared dabeli masala/
2 tbsp sweet tamarind chutney/ मीठी इमली की चटनी
½ cups warm water / गरम पानी
salt to taste/ नमक स्वादअनुसार
½ cups pomegranate pearls/ अनार के दाने
2 tbsp coriander seeds/ धनिया के बीज
For Garlic Chilli Chutney
10-12 kashmiri red chilli, soaked/ कश्मीरी लाल मिर्च
½ cups garlic cloves/ लहसुन
½ no lime juice/ निम्बू का रस
salt to taste/ नमक स्वादअनुसार
Assembly
6 paav/ buns/ पाव
2 tbsp butter/ मक्खन
red garlic chutney/ लाल लहसुन की चटनी
sweet tamarind chutney/ मीठी इमली की चटनी
½ cups masala peanuts/ मसाला मूंगफली
¼ cups nylon sev/ नायलॉन सेव
¼ cups onion, chopped/ प्याज कटा हुआ
1 tbsp coriander leaves, chopped/ धनिया पत्त कटा हुआ
Process
- For dabeli masala add in all dry spices into blender & blend into fine powder. Keep aside for later use.
- For filling heat oil and saute onion and hing. Add in mashed potato, dabeli masala, water, salt, sweet tamarind chutney and mix well; cook for 2-3 minutes.
- When done remove filling onto a plate and spread. Top it with pomegranate pearls & coriander leaves.
- For garlic chutney; add in all ingredients into a blender and blend into a smooth paste. Keep aside for later use.
- In a plate add nylon sev, peanuts and coriander leaves.
- Apply sweet chutney on 1 side of paav and green chutney on the other side of paav.
- Stuff paav with prepared potato filling. Add some chopped onion and coriander leaves.
- Top it up with peanuts and sev.
