
Ingredients
1 tbsp Oil, तेल
½ inch Ginger, chopped, अदरक
2-4 French beans, chopped, फ्रेंच बींस
1 medium size Carrot, finely chopped, गाजर
2 Green chillies, roughly chopped, हरी मिर्च
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
¼ tsp Coriander powder, धनिया पाउडर
2 medium size Potato, boiled & mashed, आलू
Salt to taste, नमक स्वादानुसार
Prepared Masala, तैयार किया हुआ मसाला
1 tbsp Coriander leaves, chopped, धनिया पत्ता
For Masala
2 tbsp Cumin seeds, जीरा
1 tbsp Fennel seeds, सॉफ
1 tbsp Coriander seeds, धनिया के बीज
1 tbsp Black peppercorns, काली मिर्च के दाने
Salt, नमक
For Toasting Buns
2 tbsp Butter, cubes, मक्खन
A pinch of degi red chilli powder, देगी लाल मिर्च पाउडर
A pinch of garam masala, गरम मसाला
2 Burger buns, cut into half, बर्गर बन
For Batter
1½ cups Gram flour, बेसन
¼ cup Semolina, रवा
½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
A pinch of asafoetida, हींग
2 tbsp Curd, दही
¼ tsp Carom seeds, अजवाइन
¼ tsp Baking soda, खाने का सोडा
Salt to taste, नमक स्वादानुसार
Oil for deep frying, तेल तलने के लिए
Other Ingredients
Curd, beaten, दही
Fried Boondi, तली हुई बूंदी
Pomegranate pearls, अनार के दाने
Tamarind chutney, इमली की चटनी
Green chutney, हरी चटनी
Nylon sev, सेव
Coriander sprig, धनिया पत्ता
Process
- Heat oil in a pan, add ginger, green chillies, french beans, carrot and saute it well.
- Add degi red chilli powder, turmeric powder, coriander powder, salt to taste and saute for a minute.
- Add boiled & mashed potatoes and mix everything well.
- Now add the prepared masala, chopped coriander leaves and mix it well.
- Onces it’s done transfer it into a bowl and keep it aside for future use.
For Masala
- In a pan, add cumin seeds, fennel seeds, coriander seeds, black peppercorns and salt dry roast on medium flame.
- Transfer this into a mortar pestle and grind it coarsely.
- Keep aside for future use.
For Toasting Buns
- In a pan, add butter, once it’s melted add degi red chilli powder, garam masala to toast the burger buns from both the sides properly.
For Batter
- In a bowl, add gram flour, semolina, degi red chilli powder, a pinch of asafoetida, and curd.
- Add carom seeds, baking soda, salt to taste and water as required. Make a thick consistency batter.
- Add the prepared mixture in the burger buns close it
- Heat oil in a kadai. Dip burger buns in the prepared batter and deep fry till golden brown and crisp.
- Drain on absorbent paper and set aside. Cut into small pieces and transfer to a serving plate.
- Drizzle sweetened yogurt, tamarind chutney and green chutney on top. Sprinkle some nylon sev, pomegranate pearls, and fried boondi on top.
- Garnish it with coriander sprig and serve hot.
