
Ingredients
Spice Mix 1
1 bay leaf
2 Dry Red Chilies
4 Green Cardamoms
1 inch Cinnamon Stick
3-4 Cloves
Spice Mix 2
1 Tsp Turmeric Powder
1 ½ Tsp Red Chili Powder
1 tsp Cumin Powder
1 tsp Garam Masala
Khichuri Ingredients
1 Cup Basamati Rice/Gobindo Bhog Rice
1 Cup Moong Dal
2 tbsp Ghee
Spice Mix 1
1 tbsp Ginger, chopped
Hing, a pinch
1 Cup Tomato, chopped
Spice Mix 2
Salt, to taste
1 tbsp Sugar
1 ½ Cup Mixed Vegetables (Green Peas, Cauliflower, Carrot, Beans, potatoes)
Process
- Rinse and soak the rice for 30 minutes.
- Dry roast the moong dal till it is nicely toasted. Rinse the dal and soak the dal in ½ cup water and keep aside.
- Heat ghee in a heavy bottom pan, add spice mix 1, hing, ginger and sauté for few seconds.
- Add tomatoes and cook till fat separates. Add spice mix 2, salt, sugar and cook for few more seconds.
- Add vegetables and sauté for few seconds.
- Add 2 cups of hot water. Drain the water from dal and add dal to the pan.
- Cover the pan and cook till the dal is half done.
- Add rice and 2 cups of more hot water. Cook till the rice is cooked.
- Serve with different types of bhaja.
