Ingredients

For Paste

2 tbsp Oil, तेल

2 tbsp Ghee, घी

2 no. large Onions, roughly sliced, प्याज

1 ½ inch Ginger (peeled & sliced) अदरक

7-8 no. Garlic cloves, लहसुन

4-5 no. Green chillies (less spicy & roughly torn) हरी मिर्च

3 no. Green cardamom, हरी इलायची

1 tbsp Black peppercorns, काली मिर्च के दाने

1 tbsp Tender Coriander stems, roughly torn, धनिये के डंठल

½ cup fresh Mint leaves, पुदीना पत्ता

1 cup fresh Coriander leaves, धनिया पत्ता

1 tbsp Coriander powder, धनिया पाउडर

1 tsp Turmeric powder, हल्दी पाउडर

1 ½ cups Curd, beaten, दही

Salt to taste, नमक स्वादअनुसार

 

For Afghani Egg Curry

2 tbsp Ghee, घी

1 no. Bay leaf, तेज पत्ता

5 no. Black peppercorns, काली मिर्च के दाने

¼ inch Cinnamon stick, दालचीनी

Prepared Paste, तयार की हुई पेस्ट

1 ½ cups Water, पानी

 

For Sauteing Eggs

2-3 tbsp Oil, तेल

3-4 no. Garlic cloves, roughly sliced, लहसुन

6 no. Boiled Eggs, उबले हुए अंडे

½ tbsp dry Fenugreek leaves, कसूरी मेथी

½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर

1 no. large Tomato, roughly diced, टमाटर

¼ tsp Black peppercorns, crushed, कुटी हुई काली मिर्च

 

For Garnish

Coriander sprig, धनिया पत्ता

Process

For Paste

  • In a kadai, add oil, ghee, once it’s hot, add onions, ginger, garlic, green chillies and saute it for 2-3 minutes until translucent.
  • Add green cardamom, black peppercorns, tender coriander stems and cook it for a minute.
  • Add mint leaves, fresh coriander leaves, coriander powder, turmeric powder, curd and salt to taste.
  • Transfer it to a mixer grinder jar and make a smooth paste.
  • Keep it aside for further use.

 

For Afghani Egg Curry

  • In a handi, add ghee, once it’s hot, add bay leaf, black peppercorn, cinnamon stick and let it splutter.
  • Add prepared paste and cook it well for a while until thick.
  • Add water and get a quick boil.
  • Transfer it to a serving dish, place sauteed eggs and garnish it with coriander sprig.
  • Serve hot with roti.

 

For Sauteing Eggs

  • In a pan, add oil, once it’s hot, garlic, boiled eggs, dry fenugreek leaves, degi red chili powder, tomato and saute it for 2-3 minutes.
  • Add crushed black peppercorns and keep it aside for further use.
