Ingredients

For Stock

2 -3 tbsp Ghee, घी

2 medium Onions (sliced), प्याज

½ tbsp Tender Coriander stem (chopped), धनिया के डंठल

10-12 no. Black peppercorns, काली मिर्च के दाने

1 no. Black cardamom, बड़ी इलायची

3-4 cups Water, पानी

7-8 no. Cashew Nuts, काजू

Salt to taste, नमक स्वादअनुसार

1 tbsp Tamarind, इमली

 

For Paste

10-12 no. dry Bedgi red chillies (seedless & soaked overnight) बेडगी मिर्च

4-5 no. Garlic cloves, लहसुन

 

For Anda Ghee Roast

3-4 heaped tbsp Ghee, घी

1 inch Cinnamon stick, दालचीनी

Prepared paste, तैयार किया हुआ पेस्ट

Prepared stock, तैयार किया हुआ स्टॉक

Salt to taste, नमक स्वादअनुसार

2 sprig Curry leaves, कडी पत्ते

Prepared stock, तैयार किया हुआ स्टॉक

2-3 tbsp Ghee, घी

2 tbsp jaggery, गुड़

6-7 no. hard Boiled Eggs, उबले हुए अंडे

½ cup Hot water, गर्म पानी

½ tbsp Tender Coriander stem (finely chopped) धनिया के डंठल

 

For Garnish

Coriander sprig, धनिया पत्ता

Process

For Stock

  • In a stock pot, add ghee, once it’s hot, add onions and saute for 2-4 minutes.
  • Add tender coriander stem, black peppercorn, black cardamom, water, cashewnut, salt to taste, tamarind and simmer it for a while.
  • Blend the mixture with the help of a hand blender and grind it to smooth puree.
  • Strain the stock and keep it aside for further use.

For Paste

  • In a bowl, add soaked bedgi dry red chillies and garlic cloves.
  • Transfer it to a grinder jar and grind into a smooth paste.
  • Keep it aside for further use.

 

For Anda Ghee Roast

  • In a handi, add ghee, once it’s hot, add cinnamon stick, prepared paste and saute it for 4-5 minutes.
  • Gradually add stock, salt to taste, curry leaves and cook it on medium flames for a while.
  • Add ghee and let it simmer until oil is separated.
  • Add boiled eggs and cook it well.
  • Transfer it to a serving dish and garnish it with coriander sprig.
  • Serve hot with lachha paratha or neer dosa.
