Egg Pollichathu केरल style ग्रिल अंडा Kerala style Egg wrap
You would have tried Meen Pollichathu and other Egg recipes. But bet you anything that after this Egg Pollichathu, i.e, Egg wrapped and cooked in Banana leaf will change your mind forever :)
Ingredients
For Onion Tomato Mixture
2-3 tbsp Oil, तेल
½ tsp Small Mustard seeds (optional) छोटी राई
½ tsp Cumin seeds, जीरा
2 no. Curry leaves (optional) कडी पत्ते
3 large Onions, sliced, प्याज
½ tbsp Ginger garlic paste, अदरक लहसुन का पेस्ट
½ tsp Turmeric powder, हल्दी पाउडर
½ tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
3 large Tomato, chopped, टमाटर
4-5 no. Green chillies (less spicy & chopped) हरी मिर्च
⅓ cup Water, पानी
Salt to taste, नमक स्वादअनुसार
2 tbsp Coriander leaves, finely chopped, धनिया पत्ता
For Egg Mixture
6 no. Eggs, अंडे
Salt to taste, नमक स्वादअनुसार
½ tsp Oil, तेल
Other Ingredients
2 tsp Oil, तेल
Prepared Masala, तैयार किया हुआ मसाला
Cheese, grated, चीज़
1 Boiled Egg, grated, उबले हुए अंडे
Prepared Masala, तैयार किया हुआ मसाला
1 large Tomato, sliced, टमाटर
2-3 no. Green chillies (less spicy & diagonally sliced) हरी मिर्च
A pinch of degi red chilli powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वादअनुसार`
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Onion Tomato Mixture
- In a handi, add oil, once it’s hot, add small mustard seeds, cumin seeds, curry leaves and let it splutter well.
- Add onion and saute it for 2-4 minutes on medium flame until translucent. Add ginger garlic paste and saute it well for a while.
- Add turmeric powder, degi red chilli powder, tomatoes, green chillies and saute it on medium flame.
- Add water, salt to taste and let it cook for 4-5 minutes.
- Finish it with coriander leaves and keep it aside for further use..
For Omelette
- In a bowl, add eggs, salt to taste, oil and whisk it well.
- In a pan, add oil, once it’s hot, pour the mixture and make a thin omelet.
- Transfer it to a plate and keep it aside for further use.
For Assembling
- Place the prepared omelette, add prepared masala, grated cheese and boiled egg.
- Add prepared masala and seal it from all the sides.
- Run the banana leaf on fire for 2-3 seconds to make it soft and moldable.
- Take a big piece of wilted banana leaf, add a tablespoon of the prepared masala in the center.
- Place the omelette on it, place the sliced tomatoes, green chillies, add a pinch of degi red chilli powder and salt to taste.
- Fold the banana leaf to make a small pocket.
- In a pan, add oil, once it’s hot, place the prepared pocket and cook it for 5 minutes on a low flame from both the sides.
