Ingredients
2-3 tbsp Ghee, घी
2-3 no. Green Cardamom, हरी इलायची
1 no. Black Cardamom, बड़ी इलायची
2-3 no. Cloves, लौंग
4-5 no. Black Peppercorns, काली मिर्च के दाने
¼ no. Mace, जावित्री
¼ inch Cinnamon stick, दालचीनी
1 no. Bay leaf, तेज पत्ता
10-12 no. Cashew Nuts, काजू
10-12 no. Raisins, किशमिश
3-4 large Potatoes (peeled & cut into diced), आलू
1 cup Water, पानी
Salt to taste, नमक स्वादअनुसार
1 medium Cauliflower (cut into florets), फूलगोभी
1 cup Fresh Green peas, हरे मटर
Prepared Curd Mixture, तैयार किया हुआ दही का मिश्रण
2-3 tbsp fresh Coriander leaves (chopped), धनिया पत्ता
650 gms Sella Basmati rice (soaked for ½ hr), भिगोए हुए सेला बासमती चावल
2-3 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
1-2 tsp Ghee (for finishing), घी
For Curd Mixture
1 cup Curd (beaten), दही
1 tbsp Ginger Garlic paste, अदरक-लहसुन का पेस्ट
1 tbsp Coriander powder, धनिया पाउडर
1 tsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
For Alsi Ki Chutney
Salt, नमक
¼ cup Flax Seeds, अलसी के बीज
3-4 no. Garlic cloves, लहसुन
2 no. Green Chillies (less spicy & roughly chopped), हरी मिर्च
2-3 tbsp fresh Coriander leaves (chopped), धनिया पत्ता
Toasted Flax seeds, भुने हुए अलसी के बीज
¾ cup Curd (beaten), दही
For Garnish
Mint Sprig, पुदीने का पत्ता
Green Chilli (slit into half), हरी मिर्च
Coriander Sprig, धनिया पत्ता
Process
For Aloo Matar Ki Tehri
- In a handi, add ghee, once it’s hot, add green cardamom, black cardamom, black peppercorns, cloves, mace, cinnamon stick, bay leaf, cashew nuts, raisins and saute for a minute.
- Add potatoes, water, cover it with the lid and let it cook for 4-5 minutes.
- Add salt to taste, cauliflower, fresh green peas, prepared curd mixture and cook for a while or until oil separates from the masala.
- Add fresh coriander leaves, soaked sella basmati rice, water, salt to taste, cover it with the lid and cook for 12-15 minutes on low flames or until it’s cooked.
- Once tehri gets cooked properly then transfer it into the parat and add ghee for finishing and give it a good mix.
- Transfer it into the serving dish and garnish it with mint sprig, green chilli and coriander sprig.
- Serve hot with prepared alsi ki chutney.
For Curd Mixture
- In a bowl, add curd, ginger garlic paste, coriander powder, degi red chilli powder, turmeric powder and give it a good mix.
- Keep it aside for further use.
For Alsi Ki Chutney
- In a pan, add salt, flax seeds and roast for 2-3 minutes or until it splutters well.
- Transfer it into the tray and keep it aside for further use.
- In a mortar pestle, add garlic cloves, green chillies, fresh coriander leaves, toasted flax seeds and grind it into the coarsely paste.
- Transfer the paste into the bowl, add curd and give it a good mix.
- Keep it aside for further use.
