Chicken Curry ऐसी कि बाकी सब भूल जाएंगे! Dhaba Chicken Curry ढाबे वाला चिकन करी
Tez आंच, bhuna masala aur ढाबे wali khushboo. Here's my recipe for a classic Dhaba Chicken Curry, bold flavours aur seedha dil tak swaad. Har bite में highway का asli maza.
Ingredients
For Chicken Marination
1 kg Chicken (thigh & drumstick), चिकन
Salt to taste, नमक स्वादअनुसार
1 heaped tbsp Ginger Garlic paste, अदरक-लहसुन का पेस्ट
1 tbsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर
2 tsp Mustard oil, सरसों का तेल
For Dhaba Style Chicken Curry
⅓ cup Mustard oil, सरसों का तेल
2-3 no. Green Cardamom, हरी इलायची
4-5 no. Black Peppercorns, काली मिर्च के दाने
2-3 no. Cloves, लौंग
2 large Onions (roughly sliced), प्याज
2 medium Tomatoes (roughly chopped), टमाटर
4 large Tomatoes (puree), टमाटर प्यूरी
2 tbsp Ginger Garlic paste, अदरक-लहसुन का पेस्ट
1 tbsp Ghee, घी
1 heaped tbsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर
1 heaped tbsp Coriander powder, धनिया पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
Salt to taste, नमक स्वादअनुसार
Marinated Chicken, मैरिनेटेड चिकन
3-4 cups Hot Water, गर्म पानी
5 no. Green Chillies (less spicy & chopped), हरी मिर्च
½ inch Ginger (peeled & julienned), अदरक
¼ cup fresh Coriander leaves (chopped), धनिया पत्ता
1 tbsp Tender Coriander stems (chopped), धनिया के डंठल
1 tsp Black Pepper powder, काली मिर्च पाउडर
½ tsp Garam masala, गरम मसाला
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Chicken Marination
- In a bowl, add chicken, salt to taste, ginger garlic paste, degi red chilli powder, mustard oil and marinate well.
- Keep it aside for further use.
For Dhaba Style Chicken Curry
- In a handi, add mustard oil, once it’s smoky hot, add green cardamom, black peppercorns, cloves and splutter well.
- Add onions and cook for 5-6 minutes or until it’s light golden in colour.
- Add tomatoes, tomato puree and cook for a while.
- Add ginger garlic paste, ghee and cook for another 4-5 minutes.
- Now, add degi red chilli powder, coriander powder, turmeric powder, salt to taste and cook for a minute.
- Add marinated chicken, hot water, give it a good mix, cover it with lid and let it simmer for 12-15 minutes or until chicken gets tender.
- Finish it with green chillies, ginger, fresh coriander leaves, black pepper powder, garam masala and give it a quick boil.
- Transfer it into the serving dish and garnish it with coriander sprig.
- Serve hot with roti and steam rice.
