Banarasi Gobhi Recipe | Banaras Style Gobhi Sabzi | Poori Wali Gobhi
Banarasi Gobhi – roasted gobhi, khatti-meethi tamarind gravy aur Banarasi masalon se bani traditional curry, poori ke saath perfect.

Ingredients
For Cleaning Cauliflower
- 1 large Cauliflower (washed), फूलगोभी
- Water as required, पानी
- Salt to taste, नमक स्वादअनुसार
For Soaking Tamarind
- Warm Water, गर्म पानी
- ½ cup Tamarind, इमली
For Roasting Cauliflower
- 2 tbsp Oil, तेल
- 2-3 tbsp Ghee, घी
- 1 large Cauliflower (washed & cleaned), फूलगोभी
- 2 tbsp Ghee, घी
For Banarasi Gobhi
- Remaining Oil & Ghee, बचा हुआ तेल और घी
- 1 inch Ginger (peeled & julienned), अदरक
- 4-5 no. Green Chillies (less spicy & chopped), हरी मिर्च
- 1 tbsp Tender Coriander stem (chopped), धनिये के डंठल
- ½ tsp small Mustard seeds, सरसों के बीज
- ½ tsp Nigella seeds, कलौंजी
- 2 tbsp Coriander powder, धनिया पाउडर
- ½ tbsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर
- A pinch of Asafoetida, हींग
- 1 tsp Turmeric powder, हल्दी पाउडर
- Salt to taste, नमक स्वादअनुसार
- 1 cup Water, पानी
- Roasted Cauliflower, भुनी हुई फूलगोभी
- 8-10 no. Raisins, किशमिश
- ½ tbsp Dry Fenugreek leaves (crushed), कसूरी मेथी
- 1 cup Soaked Tamarind water, भीगी हुई इमली का पानी
- 1-2 tsp Sugar, चीनी
- Prepared tadka, तैयार किया हुआ तड़का
For Tadka
- 2 tbsp Ghee, घी
- 2 tbsp Oil, तेल
- 3-4 no. Dry Kashmiri Red Chillies (roughly chopped), सूखी कश्मीरी लाल मिर्च
- A pinch of Asafoetida, हींग
- ¼ tsp each Fennel & Cumin seeds, सौंफ और जीरा
- 8-10 no. Cashew Nuts, काजू
For Garnish
- Namkeen Boondi, नमकीन बूंदी
- Green Chillies (sliced), हरी मिर्च
- Ginger (julienned), अदरक
- Curd (beaten), दही
- Coriander sprig, धनिया पत्ता
- A pinch of Degi Red Chilli powder, देगी लाल मिर्च पाउडर
Process
For Cleaning Cauliflower
- In a bowl, add water as required, salt to taste and mix well.
- Add cauliflower and keep it aside for a while.
For Soaking Tamarind
- In a bowl, add warm water and tamarind, give it a good mix and let it soak for a while.
- Keep it aside for further use.
For Roasting Cauliflower
- In a handi or pan, add oil, ghee, once it is hot, add cauliflower and cook for 4-5 minutes or until it’s half cooked.
- Add ghee, cover it with the lid and let it cook for 2-3 minutes.
- Transfer it to a plate or absorbent sheet and keep it aside for further use.
For Banarasi Gobhi
- In the same handi, add remaining oil & ghee, once hot, add ginger, green chillies, tender coriander stems, small mustard seeds, nigella seeds and cook for 2 minutes.
- Add coriander powder, degi red chilli powder, a pinch of asafoetida, turmeric powder, salt to taste and cook for a minute.
- Add water and give it a quick boil.
- Add roasted cauliflower, raisins, cover it with the lid and let it cook for 4-5 minutes.
- Now, add crushed dry fenugreek leaves, soaked tamarind water, sugar, cover it with the lid and cook for a while or until it’s cooked.
- Finish it with prepared tadka and give it a good mix.
- Transfer it into the serving platter, garnish it with namkeen boondi, green chilli, ginger, curd, coriander sprig and a pinch of degi red chilli powder.
- Serve hot with poori.
For Tadka
- In a pan, add ghee, oil, once it’s hot, add dry kashmiri red chillies, a pinch of asafoetida, fennel & cumin seeds, cashew nuts and cook for 1-2 minutes.
- Turn off the flames and keep it aside for further use.
