Ingredients

For Tea Masala

4 no. Green cardamom, हरी इलायची

2 no. Cloves, लौंग

5-6 no. Black peppercorns, काली मिर्च के दाने 

¼ tsp Fennel seeds, सौंफ

½ inch Lemon grass, लेमनग्रास 

 

For Tea 

2 cups Water, पानी

Prepared Tea Masala, तैयार किया हुआ चाय मसाला

1 heaped tbsp black Tea leaves, काली चाय पत्ती

¼ cup Jaggery, roughly chopped, गुड़

1 cup Milk, दूध

 

For Garlic Green chilli Paste 

2-3 no. Green chillies (less spicy & roughly chopped) हरी मिर्च

6-7 no. Garlic cloves, roughly chopped, लहसुन

 

For Vada Mixture

7-8 no. large Potatoes (boiled & peeled) आलू 

Prepared Garlic Green chilli paste, तैयार किया हुआ हरी मिर्च और लहसुन का पेस्ट

Prepared Tadka, तैयार किया हुआ तड़का

Salt to taste, नमक स्वादअनुसार

2 no. Green chillies, chopped, हरी मिर्च

⅓ cup Coriander leaves, chopped, धनिया पत्ता 

 

For Tadka 

1 tbsp Oil, तेल

½ tsp small Mustard seeds, बारीक राई 

3-4 no sprig Curry leaves, करी पत्ते 

¼ tsp Asafoetida, ​​हींग

½ tsp Turmeric powder, हल्दी पाउडर

1 tbsp Butter, cubed, मक्खन

 

For Batter

2 cups Gram flour, बेसन

Salt to taste, नमक स्वादअनुसार

2 tsp Sugar, चीनी

Water a required, पानी

½ tsp Turmeric powder, हल्दी पाउडर

Remaining excess oil, तेल

 

For Dry Garlic Chutney

¼ cup Oil, तेल

8-10 no. Dry red chillies, सूखी लाल मिर्च

7-8 no. Garlic cloves (with skin) लहसुन

2 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

Salt to taste, नमक स्वादअनुसार

Fried besan crumbs, तले बेसन का चुरा

 

Other Ingredients

Oil for frying, तेल तलने के लिए

 

For Toasting Buns

1 tbsp Butter, cubed, मक्खन

2 no. Burger buns, बर्गर बन

 

For Fried Chillies

1 tsp Oil, तेल

1 tsp Butter, cubed, मक्खन

4 no. Green chillies (less spicy & slit into middle) हरी मिर्च

Salt to taste, नमक स्वादअनुसार

 

For Assembling

Toasted Burger buns, बर्गर बन

Butter, मक्खन

Green chutney, हरी चटनी 

Fried besan crumbs, तले बेसन का चुरा

Batata vada, बटाटा वडा

Cheese slice, चीज स्लाइस

Dry Garlic Chutney, सुखी लहसुन की चटनी

Fried Green chillies, तली हुए हरी मिर्च

Process

For Tea Masala

  • In a mortar pestle, add green cardamom, cloves, black peppercorns, fennel seeds, lemon grass and grind it coarsely.
  • Keep it aside for further use.

 

For Tea

  • In a saucepot, add water, prepare chai masala and boil it for 4-5 minutes on medium flame.
  • Add tea leaves, jaggery and simmer it for a while.
  • Add milk and take a quick boil.
  • Strain it with the help of a strainer and pour it in the serving cups or glass.
  • Serve hot.

 

For Garlic Green Chilli Paste

  • In a mortar pestle, add green chillies, garlic and grind it coarsely.
  • Keep it aside for further use.

 

For Vada Mixture

  • In a bowl, add boiled potatoes and mash it well, add prepared garlic green chili paste and give a good mix.
  • Add prepared tadka, salt to taste, green chillies, coriander leaves and mix it well.
  • Give it a desired shape and keep it aside for further use.

 

For Tadka

  • In a pan, heat oil, add mustard seeds, curry leaves and let it splutter.
  • Add asafoetida, turmeric powder, butter and sauté it for a few seconds.
  • Keep it aside for further use.

 

For Batter

  • In a bowl, add gram flour, salt to taste, sugar, water as required and mix it well.
  • Add turmeric powder, remaining excess oil and make a smooth batter.
  • Dip the prepared vada in the batter and coat it well.
  • Place the vada into medium hot oil and fry until golden brown.
  • Keep it aside for further use.

 

For Dry Garlic Chutney

  • In a pan, heat oil, add dry red chillies and roast it for a minute on medium flame.
  • Transfer it to a tray, add garlic clove, degi red chili powder, transfer it to a mixer grinder jar and grind it coarsely.
  • Add salt to taste, fried besan crumbs and grind.
  • Transfer it to a tray or plate and keep it aside for further use.

 

For Toasting Buns

  • In a tawa, add butter, place burger buns and toast it well.
  • Transfer it to a plate and keep it aside for further use.

 

For Fried Chillies

  • In a tawa, heat oil, butter, add green chillies and roast it for a minute.
  • Sprinkle salt to taste and transfer it to a tray.
  • Keep it aside for further use.

 

For Assembling

  • In a toasted burger bun, spread butter, green chutney, add fried besan crumbs, place fried vada, cheese slice, add prepared dry garlic chutney, fried chillies and close it with another slice of bun.
  • Serve hot with chai.
