
Ingredients
For Gravy
2 tbsp Ghee, घी
2-3 tbsp Oil, तेल
7-8 no. Garlic cloves, roughly chopped, लहसुन
1 inch Ginger (peeled & sliced) अदरक
1 no. Bay leaf, तेजपत्ता
¼ inch Cinnamon stick, दालचीनी
5-6 small White onion, sliced, सफेद प्याज
Salt to taste, नमक स्वादअनुसार
2 cups Curd, beaten, दही
8-10 no. Cashew Nuts, blanched, काजू
Salt to taste, नमक स्वादअनुसार
1 ½ cups Water, पानी
1 cup Water, पानी
1 no. Green chili, slit into middle, हरी मिर्च
Salt to taste, नमक स्वादअनुसार
½ tsp Sugar, चीनी
For Masala
Salt to taste, नमक स्वादअनुसार
2 no. Black cardamom, बड़ी इलायची
2 tbsp Black peppercorns, काली मिर्च के दाने
1 tbsp Dry fenugreek leaves, कसूरी मेथी
For Sauteing Eggs
1 tbsp Ghee, घी
1 tbsp Oil, तेल
1 ½ tsp Caraway seeds, शाही जीरा
7-8 no. Eggs (hard boiled) उबले हुए अंडे
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वादअनुसार
1 tbsp Tender coriander stems, chopped, धनिया के डंठल
For Garnish
Prepared Masala, तैयार किया हुआ मसाला
Chili oil, मिर्च का तेल
Fresh cream (for finishing) ताज़ा मलाई
Coriander sprig, धनिया पत्ता
Process
For Gravy
- In a handi, heat ghee, oil, add garlic, ginger and sauté it for 2-3 minutes on medium flame.
- Add bay leaf, cinnamon stick, onion, salt to taste and cook it for 5-6 until translucent on medium flame.
- Add curd and cook it well for a while.
- Add cashew nuts, salt to taste, water and let it simmer, grind it into smooth paste with the help of a hand blender.
- Strain the gravy, add water, green chili, salt to taste, sugar and let it simmer until thick.
- Transfer it to a serving dish or bowl and place prepared sauteed eggs.
- Garnish it with prepared masala, chili oil, fresh cream and coriander sprig.
- Serve hot with roti.
For Masala
- In a pan, add salt to taste, black cardamom, black peppercorns, dry fenugreek leaves and dry roast for 2-3 minutes on medium flame.
- Transfer it to a mixer grinder jar and grind it into fine powder.
- Keep it aside for further use.
For Sauteing Eggs
- In the same pan, heat ghee, oil, add caraway seeds and let it splutter.
- Add boiled eggs and sauté it for a minute.
- Add degi red chili powder, salt to taste, tender coriander stems and toss well.
- Keep it aside for further use.
