Ingredients

For Pudina Chai

2 cups Water, पानी

1 tsp Fennel seeds, सौंफ

1 ½ tbsp Jaggery, गुड़

2 tsp Tea leaves, चाय पत्ती

4-5 Mint leaves, पुदीना पत्ता

1 lemon wedge, नींबू की फांक

 

For Ginger Green Chilli Paste

1 ½ inch Ginger (peeled & roughly chopped) अदरक

3 no. Green chillies (less spicy & roughly chopped) हरी मिर्च

Salt to taste, नमक स्वादअनुसार

 

For Cooking Dal

2 tbsp Ghee, घी

2 tbsp Oil, तेल

1 tsp Onion seeds, कलौंजी

1 tsp Fennel seeds, सौंफ

¼ tsp Fenugreek seeds, मेथी के बीज

2 tsp Cumin seeds, जीरा

½ tsp small Mustard seeds, राई

Prepared Ginger green chili paste, तयार किया हुआ अदरक हरी मिर्च का पेस्ट

½ cup Toor dal, washed, तूर दाल

¼ cup Moong dal, washed, मूंग की दाल

½ tsp Asafoetida, हींग

2 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

1 tsp Turmeric powder, हल्दी पाउडर

Salt to taste, नमक स्वादअनुसार

2 ½ cups Water, पानी

½ Raw Mango (peeled & roughly chopped) कच्चा आम

1 ½ tbsp Jaggery, गुड़

 

For Cooking Rice

3 cups Water, पानी

Salt to taste, नमक स्वादअनुसार

3 no. Green cardamom, हरी इलायची

2 cups Short grain rice (Ambemohar), washed, चावल

 

For Frying Chillies

¼ cup Oil, तेल

2 tbsp Ghee, घी

5-6 no. Dry red chillies, सूखी लाल मिर्च

 

For Garnish

Fried chillies, तली हुई लाल मिर्च

Lemon wedge, नींबू की फांक

Coriander sprig, धनिया पत्ता

Process

For Pudina Chai

  • In a kettle, add water, fennel seeds, jaggery, tea leaves and let it boil for 5-6 minutes.
  • In a cup, add mint leaves, lemon wedge and prepared chai and mix well.
  • Serve hot.

 

For Ginger Green Chilli Paste

  • In a mortar pestle, add ginger, green chillies, salt to taste and grind it into coarsely paste.
  • Keep it aside for further use.

 

For Cooking Dal

  • In a handi, heat ghee & oil, add onions seeds, fennel seeds, fenugreek seeds, cumin seeds, small mustard seeds, prepared ginger green chili paste and let it saute for a minute.
  • Add toor dal, moong dal and saute it very well.
  • Add asafoetida, degi red chili powder, turmeric powder, salt to taste, water and mix it well.
  • Cover it with the lid and cook it for 20-25 minutes on medium flame.
  • Add raw mango, jaggery and cook it for 2-3 minutes.
  • Transfer it on a serving dish along with prepared rice and garnish it with fried red chillies, lemon wedge and coriander sprig.
  • Serve hot.

 

For Cooking Rice

  • In a handi, add water, salt to taste, green cardamom, short grain rice and mix it well.
  • Cover it with the lid and cook it for 10-15 minutes on low to medium flame.
  • Open the lid and transfer it to the serving dish or bowl along with prepared cooked dal.
  • Serve hot.

 

For Frying Chillies

  • In a pan, heat oil & ghee, add dry red chillies and fry them for 2-3 minutes or until it’s crispy.
  • Remove it on a plate or tray and keep it aside for further use.
