Ingredients
For Red Paste
10-12 Dry red chillies, soaked, सुखी कश्मीरी लाल मिर्च
½ inch Ginger, peeled, slice, अदरक
8-10 Garlic cloves, लहसुन
4-5 Fenugreek seeds, मेथी दाना
¼ tsp Fennel seeds, सौंफ
¼ tsp Cumin seeds, जीरा
½ tsp Coriander seeds, धनिया की बीज
2 Cloves, लॉन्ग
6-7 Black peppercorns, काली मिर्च के दाने
½ tbsp Oil, तेल
½ tsp Sugar, चीनी
For Green Paste
⅓ cup fresh Coconut, scraped, नारियल
½ inch Ginger, peeled, slice, अदरक
2-4 Garlic cloves, लहसुन
4 Green chillies, हरी मिर्च
¼ cup fresh Mint leaves, पुदीने के पत्ते
¼ cup fresh Coriander leaves, roughly chopped, धनिया पत्ता
½ tsp Sugar, चीनी
For Fish Marination
3 fresh Pomfret, clean and slit, पापलेट मछली
Salt to taste, नमक स्वादअनुसार
½ Lemon juice, नींबू का रस
For Banana Leaf Fry Fish
1 Marinated Pomfret, मैरिनेटेड पापलेट
Prepared Green paste, तैयार किया हुआ हरा पेस्ट
½ Lemon juice, नींबू का रस
½ Lemon, slice, नींबू
1 Green chili, slit, हरी मिर्च
Banana leaf, केले के पत्ते
1 tbsp Oil, तेल
For Tawa Fry Fish
1 Marinated Pomfret, मैरिनेटेड पापलेट
½ Onion, slice, प्याज
Salt to taste, नमक स्वादअनुसार
Prepared Red Paste, तैयार किया हुआ मिर्च का पेस्ट
½ tsp Lemon juice, नींबू का रस
1 tbsp Oil, तेल
For Rava Fry Fish
For Coating
1 tbsp Semolina, रवा
2 tbsp Rice flour, चावल का आटा
Salt to taste, नमक स्वादअनुसार
½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
¼ tsp Coriander powder, धनिया पाउडर
A pinch of dry mango powder, अमचूर पाउडर
Prepared Red Paste, तैयार किया हुआ मिर्च का पेस्ट
1 Marinated Pomfret, मैरिनेटेड पापलेट
For Salad
½ Onion, slice, प्याज
½ Raw mango, slice, कच्चा आम
½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
A pinch of dry mango powder, अमचूर पाउडर
Salt to taste, नमक स्वादअनुसार
½ Lemon juice, नींबू का रस
few Coriander leaves, धनिया पत्ता
few Mint leaves, पुदीने के पत्ते
1 tsp Fried fish oil, तली हुई मछली का तेल
For Tawa Fish Masala
2 tbsp Prepared Red Paste, तैयार किया हुआ मिर्च का पेस्ट
1 tsp Oil, तेल
2 tbsp Water, पानी
Salt to taste, नमक स्वादअनुसार
½ Lemon juice, नींबू का रस
For Garnish
Lemon, slice, नींबू
Coriander sprig, धनिया पत्ता
Process
Process
For Red Paste
- In a bowl, add soaked red chillies, ginger, garlic, fenugreek seeds, fennel seeds, cumin seeds.
- Coriander seeds, cloves, black peppercorns, oil and sugar transfer this into a grinder jar and grind into a thick smooth paste. Keep aside for further use.
For Green Paste
- In a bowl, add fresh coconut, ginger, garlic, green chillies, mint leaves, coriander leaves and sugar.
- Transfer this into a grinder jar and grind into a thick smooth paste and keep aside for further use.
For Fish Marination
- On a plate keep the cleaned pomfret, give it a slit, sprinkle some salt, and lemon juice.
- Mix well to coat the fish. Keep it aside for further use.
For Banana Leaf Fry Fish
- Take the marinated pomfret, make a thin slit and stuff it with the prepared green paste and coat it with the remaining paste on both the sides. Squeeze half the lemon and marinate well.
- Cut the stem of the banana leaf and cut it into squares big enough to fit the fish fillet.
- Gently toast them on a pan set on medium heat. this will ensure that they don’t crack when folded. Remove from heat and set aside.
- Place the fish over the leaf. Place the lemon slice, green chilli.
- Carefully wrap the fish with the banana leaf making sure that it is fully covered. Tie these parcels of banana leaf with a cotton string.
- In a pan add oil once hot, place the wrap fish.
- Cook on low heat for 5 minutes on each side.
- Unwrap and serve hot.
For Tawa Fry Fish
- In a small bowl, add onion, salt to taste, add little prepared red paste and mix it well.
- Take the marinated pomfret and stuff it with seasoned onion and coat it well with prepared red paste.
- Squeeze the half lemon. Heat oil in a pan, place the marinated fish carefully and cook them for 5 minutes.
- Flip the fish and cook the other side too for 5 minutes.
- Each side should be shallow fried well for 10 minutes on low to medium flame.
- Take the fish pieces out.
- Place them on a serving plate. Garnish it with prepared salad, coriander sprig and lemon slice.
- Serve hot.
For Rava Fry Fish
For Coating
- In a bowl, add semolina, rice flour, salt to taste, degi red chilli powder, coriander powder, and a pinch of dry mango powder and mix well.
- Take the marinated pomfret and coat it with a fish prepared red paste and coat the fish in the dry mixture on both sides. Set aside on a plate.
For Frying
- Heat oil in a pan, place the marinated fish carefully and cook them for 5 minutes.
- Flip the fish and cook the other side too for 5 minutes.
- Each side should be shallow fried well for 10 minutes on low to medium flame.
- Take the fish pieces out.
- Place them on a serving plate. Garnish it with prepared salad, coriander sprig and lemon slice.
- Serve hot.
For Salad
- In a bowl, add onion, raw mango, degi red chilli powder, a pinch of dry mango powder, and salt to taste.
- Add lemon juice, coriander leaves, mint leaves and fried fish oil and mix everything well.
- Keep aside for further use.
For Tawa Fish Masala
- In the same pan, add prepared red paste, oil, water, salt to taste.
- Saute it well, add lemon juice and mix it well.
- Keep aside for further use.
