This recipe takes me back to the backwaters; one of the best fish fry recipes that I had during my last trip to God's Own Country. And thanks to https://www.youtube.com/c/AsahiKaseiI... I didn't have to worry about my fridge smelling like a fish market or about reusing a greased pan!

Ingredients

For Marination

2 tsp Lemon juice, नींबू का रस

1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

Salt to taste, नमक स्वादअनुसार

½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

¼ tsp Turmeric powder, हल्दी पाउडर

½ tsp Oil, तेल

2 Pomfret (cleaned & slit) पापलेट

 

For Spice Water

¼ cup Water, पानी

½ tsp Turmeric powder, हल्दी पाउडर

1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

1 tsp Coriander powder, धनिया पाउडर

 

For Onion Tomato Masala

1 ½ tbsp Coconut oil, नारियल का तेल

½ inch Ginger, chopped, अदरक

2-3 Garlic cloves, chopped, लहसुन

1 Green chilli (less spicy) chopped, हरी मिर्च

2 sprig Curry leaves, कड़ी पत्ता

⅓ cup Shallots, slice, छोटे प्याज

2 medium Onion, chopped, प्याज

1 medium size Tomato, chopped, टमाटर

Salt to taste, नमक स्वादअनुसार

Prepared Spice Water

1 sprig Curry leaves, कड़ी पत्ता

 

For Assembling

Seared Fish, मछली

Prepared Onion Tomato Masala, तैयार किया हुआ प्याज टमाटर का मसाला

 

Other Ingredients

Banana leaf, केले का पत्ता

 

For Garnish

Fried Cashew Nut, तले हुए काजू

Coriander sprig, धनिया पत्ता

Onion, rings, प्याज

Green chilli, हरी मिर्च

Lemon, slice, नींबू

 

Process

For Marination

  • In a bowl, add lemon juice, ginger garlic paste, salt to taste, degi red chilli powder, turmeric powder, oil and mix well.
  • Marinate the fish for 10 minutes and set aside.
  • Or you can use an asahi kasei zipper bag and keep it in the refrigerator for 10 minutes.

 

For Spice Water

  • In a bowl, add water, turmeric powder, degi red chilli powder, coriander powder and mix well. Keep aside for further use.

 

For Onion Tomato Masala

  • In a shallow pan, add coconut oil once the oil is hot, add ginger, garlic, green chilli, curry leaves, onions and saute until translucent.
  • Add tomato, salt to taste and saute for 2-4 minutes.
  • Add spice water, curry leaves and mix well.
  • Once the masala is cooked, transfer it into a tray and keep aside for further use.

 

For cooking Fish

  • In the same pan, apply the asahi kasei frying pan foil and seared the marinated fish from both the sides for a few minutes.
  • Keep aside on a plate.
  • Run the banana leaf on fire for 2-3 seconds. The leaf would have become soft.
  • Take a big piece of wilted banana leaf and add in two tablespoons of the prepared masala in the center. Add a piece of seared fish and cover the fish with masala.
  • Fold the banana leaf to make a small pocket.
  • Place the prepared pocket on the same pan and cook for 5 minutes on a low flame, seam side down first.
  • Sprinkle little water and cook from both the sides.
  • Remove from heat and garnish it with fried cashew nut, coriander sprig, onion rings, lemon wedge and serve hot.
