Ingredients

For Cooking Rice

2 cups Sella basmati rice,  soaked for 20 minutes

Water as required

2 Star anise

Salt to taste

1 tsp Oil

 

For Restaurant Style Fried Rice

2 tbsp Oil

1 inch Ginger, chopped

2-3 Garlic cloves, chopped

1 medium size Carrot, chopped

¼ cup Sweet corn, blanched

1 cup Cabbage, shopped

½ inch Ginger, chopped

2 Green chilli, finely chopped

1 tsp Light soy sauce

½ tsp Vinegar

1 tsp White pepper powder

8-10 French beans, chopped

Cooked Rice

Salt to taste

½ tsp Sugar

½ tsp Vinegar

¼ cup Spring onion, chopped

 

Pot Rice

Preparation time 10-15 minutes

Cooking time 20-25 minutes

Serve 2

For Cooking Rice

2 cups Sella basmati rice, soaked for 20 minutes

For Pot Rice (Gravy)

1 ½ tbsp Oil

½ inch Ginger, chopped

2-3 Garlic cloves, chopped

1 large Onion, diced

2 Dry red chillies, broken into half

1 Star anise

1 medium size Yellow bell pepper, diced

1 medium size Red bell pepper, diced

½ small Carrot, cut diagonal

⅓ cup Cauliflower, medium size florets

⅓ cup Cabbage, diced

⅓ cup Paneer, cut into small cubes

Little water

2 heaped tsp Soy sauce

2 no Spring onion white part

1 tsp Green chilli sauce,  (optional)

1 cup Water

Salt to taste

2 drop of Vinegar

½ tsp Sugar

1 tsp Ginger, finely chopped

2 tbsp Cornstarch slurry

1 tsp Toasted sesame oil

¼ cup Spring onion, chopped

 

For Assembling

Cooked Rice

Prepared Gravy

 

For Garnish

For Cooking Rice

  • In a pot, add water for boiling, salt to taste, oil and let it boil.
  • Once the water starts boiling. Add soaked sella basmati rice and let it cook on medium heat until 70% cooked.
  • Once done, strain the rice and keep aside for further use.

 

For Restaurant Style Fried Rice

  • Heat oil in a wok, once it’s hot, add ginger, garlic and saute it well.
  • Add carrot, sweet corn, cabbage, ginger, green chilli,
  • Stir fry on high flame without overcooking vegetables.
  • Add soy sauce, vinegar, white pepper powder, french beans and saute it well.
  • Add cooked rice and saute it well. Add salt to taste, sugar, vinegar and toss it well.
  • Now, add spring onion, sprinkle a little water. Cover it with the lid and cook for 2 minutes.
  • Toss everything well on high flame.
  • Garnish with spring onion and serve hot.

 

For Pot Rice

  • Add one by one all the vegetables along with paneer and toss them well.
  • Add a little water, soy sauce and mix well.
  • Cover it with the lid and cook on medium flame until it boils.
  • Add spring onion white part, green chilli sauce and mix well.
  • Add water, salt to taste, vinegar, sugar, ginger, cornstarch slurry, toasted sesame oil mix well.
  • Cook until the sauce thickens and vegetables are cooked.
  • Now, add spring onion at the end.
  • Add the cooked rice in a serving pot, pour the prepared gravy on top of it and serve hot.
