
Ingredients
For marination
2 medium whole Pomfrets, cleaned and washed
½ tsp Black Pepper powder
½ tsp Turmeric powder
1 tbsp Lime juice
1 tsp Red Chilli powder
½ tsp Degi chilli powder (optional)
1 tbsp Ginger Garlic paste
2 tbsp Coconut Oil
Other Ingredients
2 tbsp Coconut Oil
2 medium size Banana Leaves
Marinated Fish
Cashew nuts, cut into halves and toasted
Coriander sprig for garnish
Process
- Take the fish, make gashes in it for the marination to get in.
- In a mixing bowl, add red chilli powder, turmeric powder, salt, lime juice, black pepper powder, ginger garlic paste and coconut oil to make thick paste.
- Add fish to the prepared mixture, coat evenly and marinate for 20 minutes.
- Place the banana leaf on the stove on low flame and roast it evenly on both the sides.
- Place the marinated fish on banana leaf, close it, tie it with a thread and make a pocket.
- Heat coconut oil in a pan.
- Add the banana leaf pockets and cover the lid. Cook on low flame for 6-7 minutes on each side.
- Once done, open the pocket, garnish with coriander sprig and cashew nuts.
- Serve hot.
