Spicy Amritsari Fish Roll  अमृतसरी मच्छी पकोड़ा रोल  Fish recipe Recipe - Ranveer Brar

Ingredients

For Marinating Fish

1 medium Fish Fillet – cut in fingers (मछली)

½ medium Lemon Juice (नींबू का रस)

Salt to taste (नमक स्वादानुसार)

½ tsp Ginger-Garlic Juice (अदरक लहसुन का रस)

For Batter

½ tsp Carom Seeds (अजवाइन)

½ tsp Dried Fenugreek Leaves (कसूरी मेथी)

2 tbsp Coriander Leaves – chopped (धनिया पत्ता)

1 tsp Ginger-Garlic Paste (अदरक लहसुन का पेस्ट)

1 cup Gram Flour (बेसन)

½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)

½ tsp Turmeric Powder (हल्दी पाउडर)

Salt to taste (नमक स्वादानुसार)

1 tbsp Mustard Oil (सरसों का तेल)

Water as required (आवश्यकतानुसार पानी)

½ cup Refined Flour for coating (मैदा)

Oil for frying (तेल तलने के लिए)

For Roti Dough

3-4 tbsp Gram Flour (बेसन)

½ tsp Ginger-Garlic Paste (अदरक लहसुन का पेस्ट)

Salt to taste (नमक स्वादानुसार)

1-2 drops Mustard Oil (सरसों का तेल)

1 cup Refined Flour (मैदा)

½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)

½ tsp Turmeric Powder (हल्दी पाउडर)

2 heaped tbsp Curd (दही)

1 tsp Ghee (घी)

For Fresh Salad

1 medium Tomato – sliced (टमाटर)

1 medium Onion – sliced (प्याज)

1 fresh Green chilli – chopped (हरी मिर्च)

A few Mint leaves – roughly torn (पुदीने के पत्ते)

Salt to taste (नमक स्वादानुसार)

A pinch roasted Carom seeds (अजवाइन)

For Green Chutney

1 cup Mint leaves (पुदीने के पत्ते)

½ cup Coriander leaves (धनिया पत्ता)

½ inch Ginger (अदरक)

½ medium Onion – roughly chopped (प्याज)

½ small Lemon juice (नींबू का रस)

2-3 fresh Green chillies (हरी मिर्च)

Salt to taste (नमक स्वादानुसार)

Other Ingredients

1 tbsp Mayonnaise (मेयोनेज़)

For Garnish

Fresh Coriander leaves (धनिया पत्ता)

Lemon slices (नींबू)

A pinch Degi red chilli powder (देगी लाल मिर्च पाउडर)

Process

For Marinating Fish

  • In a bowl add fish, salt, lemon juice, ginger-garlic juice and mix properly and set aside for 10-15 minutes.

For Batter

  • In a bowl add carom seeds, dried fenugreek leaves, coriander leaves, ginger-garlic paste, gram flour, mustard oil, degi red chilli powder, turmeric powder, salt, water and mix properly until coating consistency.
  • Keep aside for further use.

For Roti Dough

  • In a bowl add gram flour, ginger-garlic paste, salt to taste, mustard oil, refined flour, degi red chilli powder, turmeric powder, curd and knead it properly until q semi soft dough.
  • Now add some ghee and knead once again, keep aside for further use.

For Fresh Salad

  • In a bowl add sliced tomatoes, onion, green chillies, mint leaves, salt, lemon juice and mix it properly and keep aside for further use.

For Green Chutney

  • In a grinder jar and mint leaves, coriander leaves, ginger, onion, lemon juice, green chillies, salt and grind it into a fine paste and keep aside for further use.

For Assembling Amritsari Fish Roll

  • Firstly coat the marinated fish with flour and then coat it with batter then deep fry in medium hot oil until light golden and half cooked, remove and keep aside.
  • Now take a small portion of the dough and roll it thin using a rolling pin in a small roti, and in a similar way roll the rest of the roti’s.
  • Roast these roti’s on a hot flat pan and apply some ghee cook until golden brown and crispy.
  • Before serving flash fry the fish pakoda in hot oil until golden brown and crispy.
  • Now for serving amritsari fish roll, on a roti spread mayonnaise, then place fish pakoda, some fresh salad, then some green chutney and at last garnish with coriander leaves, lemon slices, degi red chilli powder and serve immediately.
