Ingredients
For Sindhi Mutton
¼ cup Oil, तेल
4-5 no. Cloves, लौंग
1 tsp Black peppercorns, काली मिर्च के दाने
2-3 no. each Black cardamom & Green cardamom, बड़ी और हरी इलायची
3 no. Bay leaf, तेज पत्ता
2 large Onions, chopped, प्याज
Salt to taste, नमक स्वादअनुसार
1 kg Mutton with bones, मटन
2-3 tbsp Coriander leaves, roughly chopped, धनिया पत्ता
1 tsp Turmeric powder, हल्दी पाउडर
1 tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 ½ tbsp Coriander powder, धनिया पाउडर
3 large Tomatoes, finely chopped, टमाटर
Salt to taste, नमक स्वादअनुसार
4 large Tomatoes, puree, ताज़ा टमाटर की प्यूरी
¼ cup Water, पानी
3 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
1 tbsp Tender Coriander stems, finely chopped, धनिये के डंठल
1 heaped tbsp dry Fenugreek leaves, crushed, कसूरी मेथी
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Sindhi Mutton
- In a pressure cooker, add oil, once it’s hot, add cloves, black peppercorns, black cardamom, green cardamom, bay leaf, onions, salt to taste and saute it for 3-4 minutes until onions are golden in colour.
- Add mutton with bones, coriander leaves and saute it for a minute.
- Add turmeric powder, degi red chili powder, coriander powder and cook it for a minute.
- Add tomatoes, salt to taste, fresh tomato puree and cook it for a while until oil separates from the gravy.
- Add water to adjust the consistency, green chillies, cover it with a lid and cook it for 7-8 whistles until cooked well.
- Add tender coriander stems and give it a good mix.
- Finish it with dry fenugreek leaves and mix it well.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with roti.
