Ingredients

For Ginger Garlic Paste

2 ½ inch Ginger (peeled & roughly chopped) अदरक

10-12 no. Garlic cloves, लहसुन

5-6 no. Green chillies, roughly torn, हरी मिर्च

Salt to taste, नमक स्वादअनुसार

 

For Mutton Curry

1 ½ cup Mustard oil, सरसों का तेल

4 no. dry Red chillies, सुखी लाल मिर्च

1 tbsp Fennel seeds, सौंफ

½ tbsp Cumin seeds, जीरा

Prepared Ginger Garlic Paste, अदरक लहसुन पेस्ट

2 kg Mutton with bones, मटन

6 no. large Onions, sliced, प्याज

Salt to taste, नमक स्वादअनुसार

3 ½ cups Curd, beaten, दही

3 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर

¼ cup Coriander powder, धनिया पाउडर

Salt to taste, नमक स्वादअनुसार

2 tbsp Tender coriander stems with roots, finely chopped, धनिये के डंठल और जड़

4-5 cups Water, पानी

3 tbsp Prepared Masala, तयार किया हुआ मसाला

¼ cup fresh Coriander leaves, finely chopped, धनिया पत्ता

 

For Masala

2 heaped tbsp Black peppercorns, काली मिर्च के दाने

7-8 no. Black cardamom, बड़ी इलायची

10-12 no. Green cardamom, हरी इलायची

1 ½ inch Cinnamon stick, दालचीनी

 

For Aam Ka Gudamba

½ tbsp Oil, तेल

3-4 no. dry Red chillies, सुखी लाल मिर्च

1 tsp Nigella seeds, कलौंजी

1 tsp Fennel seeds, सौंफ

1 tsp Cumin seeds, जीरा

2 tbsp Ginger skin, अदरक का छिलका

10-12 no. raw Mangoes, peeled, कच्चे आम

½ inch Ginger (with skin & roughly chopped) अदरक

2 heaped tbsp Degi red chili powder,  देगी लाल मिर्च पाउडर

Salt to taste, नमक स्वादअनुसार

½ cup Jaggery, गुड़

3 cups Water, पानी

1 cup Jaggery, गुड़

 

For Garnish

Coriander sprig, धनिया पत्ता

Process

For Ginger Garlic Paste

  • In a mortar pestle, add ginger, garlic, green chillies, salt to taste and grind it coarsely.
  • Keep it aside for further use.

 

For Mutton Curry

  • In a handi, add mustard oil, once it’s hot, add dry red chillies, fennel seeds, cumin seeds, prepared ginger garlic paste and saute for a minute.
  • Add mutton with bones, onions, salt to taste and saute it for 10-15 minutes on medium flames.
  • Add curd, degi red chili powder, coriander powder and cook it well for a while.
  • Add salt to taste, tender coriander stems, water as required and cover it with the lid. Let it cook for 30-40 minutes on low to medium flames.
  • Finish it with prepared masala, fresh coriander leaves and give it a quick boil.
  • Transfer it to a serving dish and garnish it with coriander sprig.
  • Serve hot with roti.

 

For Masala

  • In a pan, add black peppercorns, black cardamom, green cardamom, cinnamon stick and roast for 2-3 minutes on low flames.
  • Transfer it to a mortar pestle or mixer grinder jar and grind it smoothly.
  • Keep it aside for further use.

 

For Aam Ka Gudamba

  • In a handi, add oil, once it’s hot, add dry red chillies, nigella seeds, fennel seeds, cumin seeds and saute it for a minute.
  • Add ginger skin, raw mangoes, ginger, Degi red chili powder, salt to taste, jaggery, water, jaggery and mix it well.
  • Cook it for 15-20 minutes on medium flames until soft.
  • Keep it aside to cool down the temperature and transfer it to an airtight container.
  • Serve with roti, paratha or dal chawal.
