Ingredients
For Paste
3-4 tbsp Tender Coriander stems with roots, roughly chopped, धनिये के डंठल और जड़ें
1 ½ inch Ginger (peeled & roughly sliced) अदरक
5-6 no Garlic cloves, roughly chopped, लहसुन
3-4 no. Green chillies (less spicy & roughly torn) हरी मिर्च
Salt to taste, नमक स्वादअनुसार
2 tbsp Oil, तेल
1 tbsp Black peppercorns, काली मिर्च के दाने
1 heaped tbsp Curd, beaten, दही
For Masala
12-15 no. Clove, लौंग
7-8 no. Black cardamom, बड़ी इलायची
2 tbsp Black peppercorns, काली मिर्च के दाने
7-8 no. Green cardamom, हरी इलायची
2 tbsp Stone flower, पत्थर का फूल
½ tbsp dry Fenugreek leaves, कसूरी मेथी
Salt to taste, नमक स्वादअनुसार
½ no. Mace, जावित्री
For Marination
1 kg Mutton with bones, मटन
Prepared Paste, तयार किया हुआ पेस्ट
1 cup Curd, beaten, दही
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
3 tbsp Coriander powder, धनिया पाउडर
¼ tsp Cumin powder, जीरा पाउडर
For Cooking Mutton
2 tbsp Oil, तेल
2 inch Cinnamon sticks, दालचीनी
2 no. Bay leaf, तेज पत्ता
Marinated Mutton, मैरीनेटेड मटन
For Mutton Pepper Curry
1 tbsp Ghee, घी
3-4 tbsp Oil, तेल
2 no. dry Red chillies, सूखी लाल मिर्च
2 no. Bay leaf, तेज पत्ता
3 no. large Onions, roughly sliced, प्याज
2 tbsp Coriander powder, धनिया पाउडर
1 ½ cups fresh Tomato puree, ताजा टमाटर की प्यूरी
Cooked mutton, पका हुआ मटन
Salt to taste, नमक स्वादअनुसार
2-3 heaped tbsp Prepared masala, तयार किया हुआ मसाला
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Paste
- In a bowl, add tender coriander stem, ginger, garlic cloves, green chillies, salt to taste, oil, black peppercorns and curd.
- Transfer it to a grinder jar and grind it smoothly.
- Keep aside for further use.
For Masala
- In a pan, add cloves, black cardamom, black peppercorns, green cardamom, stone flower, dry fenugreek leaves, salt to taste, mace and dry roast it for a while until aromatic.
- Transfer it to a grinder jar and grind it to a fine powder.
For Marination
- In a bowl, add mutton with bones, prepared paste, curd, degi red chili powder, turmeric powder, coriander powder, cumin powder and mix it well.
- Keep it aside to marinate for 5-10 minutes.
For Cooking Mutton
- In a pressure cooker, add oil, once it’s hot, add cinnamon stick, bay leaf and let it splutter.
- Add marinate mutton and cover it with a lid.
- Cook it for 6-7 whistles or until cooked well on medium to high flames.
- Keep it aside for further use.
For Mutton Pepper curry
- In a deep handi or lagan, add ghee, oil, once it’s hot, add dry red chili, bay leaf and saute it for a minute.
- Add onions, saute it for 2-3 minutes on medium flame until golden brown.
- Add coriander powder, fresh tomato puree and saute it for 5-6 minutes on medium flame.
- Add cooked mutton, salt to taste, prepared masala and simmer it for a while until thickens.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with roti.
