Malai Pyaaz ki Sabji in 10 mins कभी ना बनाई होगी ऐसी मलाई प्याज़ सब्जी

Ingredients
For Smoked Onions
3 large Onions (cut into quarters), प्याज
For Curd Mixture
600 gms Curd (beaten), दही
Prepared ginger green chilli paste, तैयार की हुई अदरक हरी मिर्च का पेस्ट
2 tbsp Coriander powder, धनिया पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
For Ginger Green chilli Paste
5 no. Green chillies (less spicy & roughly chopped), हरी मिर्च
2 inch Ginger (peeled & roughly chopped), अदरक
For Malai Pyaaz ke sabji
2-3 tbsp Oil, तेल
½ tsp Cumin seeds, जीरा
½ tsp Fennel seeds, सौंफ
3 no. Black cardamom, बड़ी इलायची
3 no. Bay leaf, तेज पत्ता
6-7 no. Button chillies, बटन मिर्च
Prepared curd mixture, तैयार किया हुआ दही का मिश्रण
Salt to taste, नमक स्वादअनुसार
Smoked Onions, स्मोक्ड प्याज
2 large Onions (cut into quarters), प्याज
Little water, पानी
¼ cup Fresh cream, ताज़ा मलाई
Fried Cashew nuts, तले हुए काजू
For Frying Nuts
2 tbsp Oil, तेल
¼ cup Cashewnuts, काजू
For Garnish
Fried cashew nuts, तले हुए काजू
Ratlami sev, रतलामी सेव
Coriander sprig, धनिया पत्ता
Process
For Smoked Onions
- Take a cooking rack, add onions and place onto the gas range.
- Cook it for 2-3 minutes on high flames until onions get charred and brown in colour.
- Keep it aside for further use.
For Curd Mixture
- In a bowl, add curd, prepared ginger green chili paste, coriander powder, degi red chili powder, turmeric powder and give it a good mix.
- Keep it aside for further use.
For Ginger Green Chilli Paste
- In a mortar pestle, add green chillies, ginger and grind it into a coarse paste.
- Keep it aside for further use.
For Malai Pyaz Ki Sabji
- In a kadai or handi, add oil, once it’s hot, add cumin seeds, fennel seeds, black cardamom, bay leaf, button chillies, prepared curd mixture and cook it for 5-6 minutes until oil is separated from the gravy.
- Add salt to taste, smoked onions, onions, little water, cover it with the lid and let it cook for a while.
- Finish it with fresh cream, fried cashew nuts and give it a good mix.
- Transfer it to a serving dish, garnish it with fried cashewnuts, ratlami sev and coriander sprig.
- Serve hot with roti.
For Frying Nuts
- In a pan, add oil, once it’s hot, add cashew nuts and fry them until golden in colour.
- Transfer it to an absorbent sheet and keep it aside for further use.
