Ingredients
For Frying Onions
¼ cup Mustard oil, सरसों का तेल
3-4 tbsp Oil, तेल
6 medium Onions, cut into half, प्याज
For Paste
1 cup fresh Coriander leaves, धनिया पत्ता
1 inch Ginger (peeled & roughly sliced) अदरक
7-8 no. Garlic cloves, लहसुन
4-5 no. Green chillies (less spicy & roughly torn) हरी मिर्च
Prepared fried onions, तले हुए प्याज
For Masala
1 ½ tsp Cumin seeds, जीरा
2-3 heaped tbsp Coriander seeds, धनिये के बीज
1 heaped tbsp Black peppercorns, काली मिर्च के दाने
5-6 no. Cloves, लॉन्ग
5-6 no. Black cardamom, बड़ी इलायची
1 ½ no. Mace, जावित्री
7-8 no. Green cardamom, हरी इलायची
2 tbsp Stone flower, पत्थर का फूल
For Mutton Curry
Remaining onion oil, बचा हुआ प्याज का तेल
2-3 no. dry Red chillies, सूखी लाल मिर्च
2-3 no. Bay leaf, तेज पत्ता
½ inch Cinnamon stick, दालचीनी
1 kg Mutton with bones, मटन
Salt to taste, नमक स्वादअनुसार
1 tsp Turmeric powder, हल्दी पाउडर
½ tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tbsp Coriander powder, धनिया पाउडर
1 tbsp Tender Coriander stems, finely chopped, धनिये के डंठल
Prepared Paste, तयार किया हुआ पेस्ट
1 ½ cups Curd, beaten, दही
2 heaped tbsp Prepared Masala, तयार किया हुआ मसाला
2 cups Warm water, गुन गुना पानी
2 tbsp Ghee, घी
1 inch Ginger (peeled & julienned) अदरक
1 no. Green chili, roughly diced, हरी मिर्च
2-3 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
1 tsp Lemon juice, नींबू का रस
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Frying Onions
- In a handi, add mustard oil, oil, once it’s hot, add onions and saute until golden in color.
- Transfer it to a bowl and keep it aside for further use.
For Paste
- In a bowl, add coriander leaves, ginger, garlic, green chillies and prepared fried onions.
- Transfer it to a mixer grinder jar and grind it smoothly.
- Keep it aside for further use.
For Masala
- In a bowl or tray, add cumin seeds, coriander seeds, black peppercorns, cloves, black cardamom, mace, green cardamom and stone flower.
- Transfer it to a mixer grinder jar and grind it smoothly.
- Keep it aside for further use.
For Mutton Curry
- In a pressure cooker, add remaining onion oil, once it’s hot, add dry red chillies, bay leaf, cinnamon stick and let it splutter.
- Add mutton with bones, salt to taste and saute for a while.
- Add turmeric powder, degi red chili powder, coriander powder, tender coriander stems and saute for a minute.
- Add prepared paste, curd and cook for 2-3 minutes on high flames.
- Add prepared masala and let it simmer for a minute.
- Add warm water, cover it with a lid and cook the mutton until 6-7 whistles on medium to high flames or until cooked well.
- Let it rest for a few minutes until cool at room temperature.
- Finish it with ghee, ginger, green chili, coriander leaves and get a quick boil.
- Add lemon juice and mix well.
- Transfer it to a serving bowl or dish and garnish it with coriander sprig.
- Serve hot with steam rice or roti.
