
Shanghai Paneer Chilli चटक चिली पनीर restaurant style Chili Paneer recipe
Ingredients
For Paneer Balls
400 gms Paneer, पनीर
½ tbsp Tender Coriander stems, chopped, धनिया के डंठल
1 tbsp Schezwan sauce, शेजवान सॉस
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 inch Ginger (peeled & grated) अदरक
Salt to taste, नमक स्वादअनुसार
3 tbsp Cornstarch, कॉर्नस्टार्च
¼ cup fresh Bread crumb, ब्रेड क्रम्ब
For Shanghai Chilli Paneer
1 ½ tbsp Oil, तेल
1 inch Ginger (peeled & chopped) अदरक
1 ½ medium Onion, diced, प्याज
1 medium Carrot (peeled & sliced) गाजर
2 no. dry Kashmiri red chillies, broken into half, सूखी कश्मीरी लाल मिर्च
1 large Red bell pepper, diced, लाल शिमला मिर्च
1 large Capsicum, diced, शिमला मिर्च
¼ cup Spring onion bulb, roughly chopped, हरी प्याज
1 tsp White sesame seeds, सफेद तिल
½ tsp Black peppercorns, crushed, कुटी हुई काली मिर्च
Fried Shanghai Paneer Balls, तले हुए शंघाई पनीर बॉल्स
Prepared Sauce, तैयार किया हुआ सॉस
¼ cup Spring onion, roughly chopped, हरी प्याज
For Sauce
2 tbsp Red chili sauce, रेड चिली सॉस
1 ½ tbsp Schezwan sauce, शेजवान सॉस
1 tbsp Green chili sauce, ग्रीन चिली सॉस
2 tsp Light soya sauce, सोया सॉस
3-4 tbsp Tomato ketchup, टोमेटो केचप
½ tsp Brown sugar, optional, ब्राउन शुगर
½ cup Water, पानी
Other Ingredients
1-2 tbsp Cornstarch (for coating) कॉर्नस्टार्च
Oil for frying, तेल तलने के लिए
For Garnish
White sesame seeds, सफेद तिल
Coriander sprig, धनिया पत्ता
Process
For Paneer Balls
- In a bowl, add paneer, tender coriander stems, schezwan sauce, degi red chili powder, ginger, salt to taste, cornstarch, bread crumbs and mix it well.
- Make lemon size balls, transfer it to a tray, sprinkle some cornstarch and coat it well.
- Heat oil in a kadai, place prepared balls and fry it until golden in color.
- Transfer it to an absorbent paper and keep it aside for further use.
For Shanghai Chilli Paneer
- In a wok, add oil, once it’s hot, add ginger, onion, carrots and saute it for a minute on high flame.
- Add dry red chillies, red bell pepper, capsicum, spring onion bulb, white sesame seeds, black peppercorns, shanghai paneer balls and toss it well on high flame.
- Add prepared sauce and cook it for 4-5 minutes until thicken.
- Finish it with some spring onion and mix it well.
- Transfer it to a serving bowl or dish, garnish it with white sesame seeds and coriander sprig.
- Serve hot.
For Sauce
- In a bowl, add red chili sauce, schezwan sauce, green chili sauce, light soy sauce, tomato ketchup, brown sugar, water and mix it well.
- Keep it aside for further use.
