Spicy Turai Gravy Sabzi तुरई की ऐसी मसालेदार सब्जी कभी नहीं खाई होगी Recipe - Ranveer Brar

Ingredients

For Marination

1 ½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

1 tsp Turmeric powder, हल्दी पाउडर

½ tsp Asafoetida, हींग

1 tbsp Coriander powder, धनिया पाउडर

Salt to taste, नमक स्वादअनुसार

1 ½ tbsp Oil, तेल

5-6 no. medium Ridge gourd (peeled & roughly diced) तुरई

 

For Paste

1 inch Ginger (peeled & roughly chopped) अदरक

3-4 no.Green chillies (less spicy & roughly torn) हरी मिर्च

 

For Curd Mixture

Prepared Ginger Green chili paste, तयार की हुई अदरक हरी मिर्च की पेस्ट

1 ½ cups Curd, beaten, दही

 

For Turai Sabji

1-2 tbsp Oil, तेल

Marinated Turai, मैरीनेटेड तुरई

Prepared Curd Mixture, तयार किया हुआ दही का मिश्रण

Roasted nuts, भुने हुए मेवे

1 ½ tbsp Coriander leaves, finely chopped, धनिया पत्ता

 

For Roasting Nuts

1-2 tbsp Remaining excess oil, तेल

8-10 no. Cashew nuts, काजू

8-10 no. Raisins, किशमिश

¼ cup Milk (for finishing) दूध

 

For Garnish

Coriander sprig, धनिया पत्ता

Process

For Marination

  • In a bowl, add degi red chili powder, turmeric powder, coriander powder, asafoetida, salt to taste, oil and mix well.
  • Add ridge gourd and mix it well.
  • Keep it aside to rest for 5-6 minutes.

 

For Paste

  • In a mortar pestle, add ginger, green chillies and grind it into coarsely paste.
  • Keep it aside for further use.

 

For Curd Mixture

  • In a bowl, add prepared ginger green chili paste, curd and mix it well.
  • Keep it aside for further use.

For Roasting Nuts

  • In a pan, add remaining excess oil, cashew nuts, raisins and toss it well.
  • Keep it aside for further use.

 

For Turai Sabji

  • In a handi or kadai, add oil, once it’s hot, add marinated turai and cover it with the lid.
  • Cook it for 3-4 minutes or until tender on low flame.
  • Add prepared curd mixture, cover it with the lid and cook it for a while.
  • Add roasted nuts and mix it well.
  • Finish it with some coriander leaves, milk and swirl it gently.
  • Transfer it to a serving dish and garnish it with coriander sprig.
  • Serve hot with roti.
