Ingredients
For Paste
3-4 tbsp Oil, तेल
1 no. Bay leaf, तेज पत्ता
1 ½ tsp Cumin seeds, जीरा
2 tsp Black peppercorns, काली मिर्च के दाने
6-7 no. Cloves, लौंग
4-5 no. Garlic cloves, chopped, लहसुन
1 inch Ginger (peeled & sliced) अदरक
3 large Onions, sliced, प्याज
1 tbsp Gram flour, बेसन
1 tbsp Coriander powder, धनिया पाउडर
Salt to taste, नमक स्वादअनुसार
1 tsp Cumin powder, जीरा पाउडर
4 medium Tomatoes, roughly diced, टमाटर
½ tbsp Black pepper powder, काली मिर्च पाउडर
⅓ cup Curd, beaten, दही
For Frying Paneer
2-3 tbsp Oil, तेल
800 gms Paneer, cut into medium cube, पनीर
Salt to taste, नमक स्वादअनुसार
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
For Paneer Bhuna Masala
2 tbsp Ghee, घी
Remaining Fried Paneer oil, तेल
Prepared Paste, तयार किया हुआ पेस्ट
1 medium Onion, diced, प्याज
1 large Green bell pepper, diced, हरी शिमला मिर्च
1 large Red bell pepper, diced, लाल शिमला मिर्च
½ cup Water, पानी
Fried Paneer, तला हुआ पनीर
1 tsp Tender Coriander stem, finely chopped, धनिये के डंठल
1 tsp dry Fenugreek leaves, crushed, कसूरी मेथी
For Garnish
Coriander sprig, धनिया पत्ता
Lemon wedge, नींबू की फांक
Process
For Paste
- In a deep pan or kadai, add oil, once it’s hot, add bay leaf, cumin seeds, black peppercorns, cloves and let it splutter well.
- Add garlic cloves, Ginger, onions and saute for 2-4 minutes until golden in color.
- Add gram flour and saute it for a minute until aromatic.
- Add coriander powder, salt to taste, cumin powder, tomato, black pepper powder, curd, cover it with a lid and cook it well for a while until cooked well.
- Transfer it to a mixer grinder jar and grind it smoothly.
- Transfer it to a bowl and keep it aside for further use.
For Frying Paneer
- In a non-stick pan, add oil, once it’s hot, add paneer and fry it for 2-3 minutes from all sides until golden in color.
- Finish it with salt to taste, degi red chili powder and toss it well.
- Keep it aside for further use.
For Paneer Bhuna Masala
- In a handi, add ghee, remaining fried paneer oil, once it’s hot, add prepared paste and cook it well for 4-5 minutes until thicken.
- Add onions, green bell pepper, red bell pepper and saute for a few minutes.
- Add water and let it simmer for a minute.
- Add fried paneer and cook it well.
- Finish it with tender coriander stems, dry fenugreek leaves and mix it well.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with roti.
