Ingredients
For Jammu Style Rajma
500 gms Kidney beans (soaked overnight), भिगोया हुआ राजमा
Remaining Water, बचा हुआ पानी
Water as required, पानी
3 no. Green Chillies (less spicy & roughly chopped), हरी मिर्च
½ inch Ginger (peeled & roughly chopped), अदरक
2 no. Black Cardamom, बड़ी इलायची
1 tbsp Black Peppercorns, काली मिर्च के दाने
1 tsp Sugar, चीनी
Salt to taste, नमक स्वादअनुसार
1 tbsp Tender Coriander stems (chopped), धनिया के डंठल
1 tsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
A pinch of Asafoetida, हींग
2 tbsp Ghee, घी
Prepared Tadka, तैयार किया हुआ तड़का
1 ½ tsp Prepared masala, तैयार किया हुआ मसाला
1 tsp Lemon juice, नींबू का रस
For Dry Masala
Salt, नमक
2 tbsp Black Peppercorns, काली मिर्च के दाने
¼ tsp Fenugreek seeds, मेथी दाना
1 ½ tsp Cumin seeds, जीरा
1 tbsp Fennel seeds, सौंफ
4-5 no. Black Cardamom, बड़ी इलायची
3-4 no. Cloves, लौंग
1 tbsp dry Fenugreek leaves, कसूरी मेथी
For Tadka
3-4 tbsp Butter (cubed), मक्खन
1 tbsp Ghee, घी
1 tbsp Oil, तेल
1 inch Ginger (peeled & finely chopped), अदरक
3-4 no. Green chillies (less spicy & chopped), हरी मिर्च
2 medium Tomatoes (chopped), टमाटर
¼ cup fresh Coriander leaves (finely chopped), धनिया पत्ता
2 tbsp Butter (cubed), मक्खन
Salt to taste, नमक स्वादअनुसार
For Garnish
Butter (cubed), मक्खन
Coriander sprig, धनिया पत्ता
Process
For Jammu Style Rajma
- In a cooker, add the soaked kidney beans along with the remaining soaking water, additional water as required, green chillies, and ginger.
- Add black cardamom, black peppercorns, sugar, salt to taste, tender coriander stems.
- Add degi red chilli powder, turmeric powder, a pinch of asafoetida, ghee, give it a good mix, cover it with the lid and cook for 5-6 whistles or until it’s 80-90% cooked.
- Now, add prepared tadka, prepared masala, and cook for a while until it’s cooked.
- Finish it with lemon juice and give it a good mix.
- Transfer it into the serving dish and garnish with butter and coriander sprig.
- Serve hot with roti, naan and steam rice.
For Dry Masala
- In a pan, add salt , black peppercorns, fenugreek seeds, cumin seeds, fennel seeds,and black cardamom.
- Add Cloves, dry fenugreek leaves and dry roast them for 2-3 minutes.
- Transfer to a mixer grinder jar and grind into a fine powder.
- Keep it aside for further use.
For Tadka
- In a pan, add butter, ghee, oil, once it’s hot, add ginger, green chillies, tomatoes and cook for 4-5 minutes or until tomatoes get mushy in texture.
- Add fresh coriander leaves, butter, salt to taste and let it cook for another 2-3 minutes.
- Keep it aside for further use.
