
Methi Chole Masala तीखा मेथी छोले मसाला spicy unique Chole recipe

Ingredients
For Cooking Chole
500 gms Chickpeas, soaked (overnight), छोले
Water as required, पानी
Salt to taste, नमक स्वादअनुसार
1 inch Cinnamon stick, दालचीनी
1 Bay leaf, तेज़पत्ता
3 no. Dry red chillies, सूखी लाल मिर्च
1 ½ tsp Tea leaves, चाय पत्ती
For Ginger Garlic Paste
1 inch Ginger, peeled & slice, अदरक
4-5 Garlic cloves, लहसुन
1 Green chili, less spicy, हरी मिर्च
Salt to taste, नमक स्वादअनुसार
For Methi Chole Masala
2 tbsp Oil, तेल
½ tsp Cumin seeds, जीरा
Prepared Ginger Garlic Paste, अदरक लहसुन का पेस्ट
2 medium size Onions, chopped, प्याज
1 tsp Kashmiri red chili powder, कश्मीरी लाल मिर्च पाउडर
2 tsp Coriander powder, धनिया पाउडर
1 ¼ cup fresh Tomato puree, ताज़े टमाटर की प्यूरी
3-4 heaped tbsp Everest chole masala, एवरेस्ट छोले मसाला
1 ¼ cup fresh Fenugreek leaves, ताजा मेथी के पत्ते
1 medium Tomato, roughly chopped, टमाटर
Salt to taste, नमक स्वादअनुसार
⅓ cup Cooked Chole water, उबले हुए छोले का पानी
1 tsp Dry fenugreek leaves, कसूरी मेथी
Pressure Cooked Chole, पके हुए छोले
1 ½ tbsp Ghee, घी
Cooked Chole water, उबले हुए छोले का पानी
2 Green chillies, less spicy & slit into half, हरी मिर्च
1 tbsp Coriander leaves, chopped, धनिया पत्ता
½ inch Ginger, peeled & julienned, अदरक
For Garnish
Ghee (for finishing) घी
Ginger, julienned, अदरक
Coriander sprig, धनिया पत्ता
Chili oil, मिर्च का तेल
Onion, प्याज
Tomato, टमाटर
Lemon wedge, नींबू की फांक
Process
For Cooking Chole
- In a pressure cooker, add chickpeas, water as required, salt to taste, cinnamon stick, bay leaf, dry red chili.
- In a muslin cloth, add tea leaves and make a potli,
- Add the potli to the chole and cook it for 4-5 whistles.
- Keep it aside for further use.
For Ginger Garlic Paste
- In a mortar pestle, add ginger, garlic, green chillies, salt to taste and make a coarse paste.
- Keep it aside for further use.
For Methi Chole Masala
- In cast iron or a kadai, add oil, once it’s hot, add cumin seeds and let it splutter.
- Add ginger garlic paste and saute for a minute, add onion and saute until translucent.
- Add degi red chili powder, coriander powder and cook.
- Add tomato puree and cook well. Add chole masala and cook for 2-3 minutes.
- Add fenugreek leaves, tomato and saute well.
- Add chole water and cook until thick. Add chole and mix everything well.
- Mash some chole and add ghee. Add water as required and give a good stir.
- Add green chili, coriander leaves, ginger and finish the gravy.
- Transfer it to a serving dish, garnish it with ghee, ginger, coriander sprig and chili oil.
- Accompany it with onion, tomato and lemon wedges.
- Serve hot.
