Famous Kulhad Chole पुरानी दिल्ली के मशहूर कुल्हड पालक छोले Old Delhi style Chole

Ingredients
For Cooking Chole
2 tbsp Ghee, घी
1 kg Soaked chickpeas, भीगे हुए छोले
Prepared bouquet garni, मसालों की पोटली
Water as required, पानी
Salt to taste, नमक स्वादअनुसार
3 no. Bay leaf, तेज पत्ता
2-3 no. dry Kashmiri red chillies (roughly torn), सूखी कश्मीरी लाल मिर्च
For Bouquet Garni
1 tbsp Tea leaves, चायपत्ती
4-5 no. Black cardamom, बड़ी इलायची
1 heaped tbsp Black peppercorns, काली मिर्च के दाने
3-4 no. Cloves, लौंग
For Boiling Spinach
Water as required, पानी
3 medium bunch Spinach (cleaned & washed), पालक
For Old Delhi Style Chole
2-3 tbsp Oil, तेल
1 no. Bay leaf, तेज पत्ता
¼ inch Cinnamon stick, दालचीनी
4 no. dry Kashmiri red chillies, सूखी कश्मीरी लाल मिर्च
2 tsp Cumin seeds, जीरा
3 medium Onions (finely chopped), प्याज
1 tbsp Coriander powder, धनिया पाउडर
1 tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Cumin powder, जीरा पाउडर
¼ tsp Turmeric powder, हल्दी पाउडर
1 heaped tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
Salt to taste, नमक स्वादअनुसार
3 medium Tomatoes (chopped), टमाटर
Prepared Spinach paste, तैयार किया हुआ पालक का पेस्ट
1 tbsp Tender Coriander stems (finely chopped), धनिये के डंठल
1 tbsp Ghee, घी
2 tbsp Ghee, घी
3 cups Hot water, गर्म पानी
1 large Tomato (cut into diced), टमाटर
Prepared masala mixture, तैयार किया हुआ मसालों का मिश्रण
½ tsp Garam masala, गरम मसाला
1 cup Hot water, गर्म पानी
Cooked chole, पके हुए छोले
250 gms Paneer, cut into cubed, पनीर
2 tsp dry Fenugreek leaves, crushed, कसूरी मेथी
Prepared tadka, तैयार किया हुआ तड़का
For Masala Mixture
1 tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tbsp Garam masala, गरम मसाला
½ tbsp Black pepper powder, काली मिर्च का पाउडर
¼ tsp Asafoetida, हींग
1 tsp dry Mango powder, आमचूर पाउडर
Salt to taste, नमक स्वादअनुसार
For Tadka
1 tbsp Ghee, घी
2 tbsp Oil, तेल
4-5 no. dry Kashmiri red chillies, सूखी कश्मीरी लाल मिर्च
1 tsp Cumin seeds, जीरा
Other Ingredients
Iced water, बर्फ का पानी
For Garnish
Ginger (julienned), अदरक
Fried chilli, तली हुई मिर्च
Coriander sprig, धनिया पत्ता
Process
For Cooking Chole
- In a pressure cooker, add ghee, once it’s hot, add soaked chickpeas, prepared bouquet garni, water as required, salt to taste, bay leaf, dry kashmiri red chillies and give it a good mix.
- Cover it with the lid and cook for 4-5 whistles until it’s cooked.
- Leave it aside to depressurize the cooker and strain the chole.
- Keep it aside for further use.
For Bouquetgarni
- Take a piece of muslin cloth, add tea leaves, black cardamom, black peppercorns, cloves and make a potli of it.
- Keep it aside for further use.
For Boiling Spinach
- In a saucepot or handi, add water as required, once its roaring boiled, add spinach and blanch it for 1-2 minutes on high flames.
- Strain the spinach, add it into ice water and leave it aside for a while.
- Squeeze out the extra water and keep it aside for further use.
For Old Delhi Style Chole
- In a handi, add oil, once it’s hot, add bay leaf, cinnamon stick, dry kashmiri red chillies, cumin seeds and let it splutter for a minute.
- Add onions and saute it until golden in colour.
- Add coriander powder, degi red chili powder, cumin powder, turmeric powder, ginger garlic paste and cook it for 2minutes.
- Add salt to taste, tomatoes and saute it for a while until tomatoes are mushy.
- Add prepared spinach paste, tender coriander stems, ghee and cook it for 7-8 minutes until oil is separated.
- Add ghee, hot water, tomato, prepared masala mixture, garam masala, hot water, cooked chole and let it simmer for another 10-12 minutes on medium flames.
- Add paneer and give it a good mix.
- Finish it with dry fenugreek leaves, prepare tadka and mix it well.
- Transfer it into a serving dish, garnish it with ginger julinned, fried chilli and coriander sprig.
- Serve hot with roti and steam rice.
For Masala mixture
- In a bowl, add degi red chili powder, garam masala, black pepper powder, asafoetida, dry mango powder, salt to taste and mix it well.
- Keep it aside for further use.
For Tadka
- In a pan, add oil, ghee, once it’s hot, add dry kashmiri red chillies, cumin seeds and let it cook it for a minute.
- Turn off the flames and keep it aside for further use.
