Ingredients
For Curd Mixture
2-3 heaped tbsp Curd, beaten, दही
⅓ cup Water, पानी
For Cooking Baby Potatoes
2-3 tbsp Ghee, घी
750 gms Baby potatoes, peeled, छोटे आलू
Prepared Curd Mixture, तैयार किया हुआ दही का मिश्रण
Salt to taste, नमक स्वादअनुसार
1 tsp Turmeric powder, हल्दी पाउडर
½ cup Water, पानी
For Jodhpuri Aloo
2 tbsp Sesame oil, तिल का तेल
½ tsp Cumin seeds, जीरा
½ tsp Fennel seeds, सौंफ़
¼ tsp Carom seeds, अजवाइन
1 tbsp Chilli flakes, कुटी हुई लाल मिर्च
2 no. dry Kashmiri red chillies, broken into half, सूखी कश्मीरी लाल मिर्च
1 inch Ginger (peeled & finely chopped) optional अदरक
2 no. Green chillies (less spicy & finely chopped) optional हरी मिर्च
1 heaped tbsp Tender coriander stems with roots, finely chopped, धनिये के डंठल और जड़ें
A pinch of asafoetida, हींग
Cooked Baby potatoes, पके हुए छोटे आलू
Little water, पानी
¼ cup Water, पानी
2 tsp dry Mango powder, आमचूर पाउडर
2 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
For Toasting
2 tbsp White sesame seeds, सफेद तिल
For Garnish
Toasted sesame seeds, भुने हुए तिल
Coriander sprig, धनिया पत्ता
Process
For Curd Mixture
- In a bowl, add curd, water and give it a good mix.
- Keep it aside for further use.
For Cooking Baby Potatoes
- In a handi, add ghee, once it’s hot, add baby potatoes, prepared curd mixture, salt to taste, turmeric powder and mix it well.
- Add water,cover it with the lid and cook it for 7-8 minutes or until cooked well.
- Keep it aside for further use.
For Jodhpuri Aloo
- In a kadai or handi, add sesame oil, once it’s smoky hot, add cumin seeds, fennel seeds, carom seeds, chili flakes, dry red chillies and let it splutter well.
- Add ginger, green chillies, tender coriander stems, a pinch of asafoetida and saute it for a while.
- Add cooked baby potatoes, water and cook it for 3-4 minutes.
- Add water, cover it with a lid and cook it for a while until cooked well.
- Finish it with dry mango powder, fresh coriander leaves and give it a good mix.
- Transfer it to a serving dish garnish it with toasted sesame seeds and coriander sprig.
- Serve hot with paratha or roti.
For Toasting
- In a pan, add white sesame seeds and roast them on high flames for 2-3 minutes.
- Transfer it to a tray or plate and keep it aside for further use.
